Tips for success

For a more intense garlic flavor, you can lightly crush the garlic cloves with the side of your knife before adding them to the slow cooker. This releases more of the essential oils into the milk. If you prefer a smoother sauce, you can strain the liquid through a fine-mesh sieve after removing the meat, discarding the spent rosemary sprigs and garlic solids before serving. This creates a refined, velvety finish that looks excellent when plated for guests.

Consider serving this dish with a side of roasted root vegetables or mashed potatoes, which are perfect for soaking up the creamy garlic sauce. The subtle sweetness of carrots or parsnips complements the savory notes of the pork and rosemary.

If you want to add a touch of brightness, a light sprinkle of fresh parsley or a squeeze of lemon juice just before serving can help cut through the richness of the milk-based sauce, providing a balanced and well-rounded dining experience.

Variations

  • Herbed Garlic Pork: Add a tablespoon of fresh thyme leaves along with the rosemary for a more complex herbal profile. The combination of woody rosemary and earthy thyme works beautifully with the creamy garlic sauce.
  • Lemon Garlic Pork: Incorporate the zest of one lemon during the final hour of cooking. The bright, citrusy notes add a refreshing contrast to the rich, milk-based sauce, balancing the overall flavor of the dish.

Storage and make-ahead

Fridge
Store in an airtight container for up to 4 days.
Freezer
Freeze in a freezer-safe container for up to 3 months.
Reheat
Reheat gently on the stovetop over low heat until warmed through, adding a splash of milk if the sauce has thickened too much.

Allow any leftovers to cool to room temperature for no more than two hours before transferring them to an airtight container. Keep the pork and the sauce stored together to ensure the meat stays moist while refrigerated.

Proper storage is key to maintaining the quality of the dish, and it should be consumed within three to four days for the best flavor and safety. Always ensure the container is sealed tightly to prevent the pork from absorbing other odors in the refrigerator.

This dish is an excellent candidate for making ahead, as the flavors often improve after sitting for a day. You can prepare the entire roast, slice it, and store it in the refrigerator along with the sauce. When ready to serve, simply reheat the slices gently in the sauce over low heat on the stovetop or in the oven until warmed through. This makes it a stress-free option for entertaining, allowing you to focus on your guests rather than spending time in the kitchen.

Serving ideas

When serving, place the sliced pork on a warmed platter to help maintain its temperature. Spoon the warm, creamy garlic sauce generously over the top of the slices, ensuring each portion is well-coated.

The visual appeal of the glossy sauce against the tender meat is part of the experience, so take care to plate it neatly. Serve immediately while the meat and sauce are hot, perhaps accompanied by crusty bread to ensure not a single drop of the flavorful sauce goes to waste.

For a formal presentation, you can arrange the slices in a slightly overlapping pattern and garnish with a few fresh rosemary needles. The simplicity of the plating allows the quality of the slow-cooked meat to stand out.

Ensure that each serving includes a good portion of the sauce, as its savory depth is the highlight of the meal. Offering a side of steamed greens or a crisp salad can provide a refreshing contrast to the richness of the pork and the creamy garlic sauce.

Frequently asked questions

Can this be made ahead of time?
Yes, this dish is perfect for making ahead. The flavors meld beautifully in the refrigerator overnight. Simply store the pork in the sauce and reheat gently on the stovetop when ready to serve.
Why does the milk sauce look curdled?
It is completely normal for the milk to separate during the long, slow cooking process. As the milk proteins denature and interact with the pork juices, they form a textured, creamy sauce that is both delicious and expected.
Can other cuts of meat be used?
While pork shoulder is recommended for its marbling and tenderness, pork loin can be used if preferred. Note that loin is leaner and may require a slightly shorter cooking time to prevent it from becoming dry.
