Tips for success
For the best flavor, sear the roast in a hot skillet with a little oil before adding it to the slow cooker. This adds a deep, caramelized crust that enhances the overall taste. However, the recipe works perfectly without searing if you're short on time.
To make your own garlic-herb butter, combine 1/2 cup softened butter with 2 cloves minced garlic, 1 tablespoon chopped fresh parsley, 1 teaspoon chopped fresh thyme, and a pinch of salt.
Shape into a log, chill, and slice into medallions. This can be made ahead and stored in the refrigerator for up to a week.
Variations
- Add Root Vegetables: Add chunks of carrots, potatoes, or parsnips to the slow cooker along with the mushrooms. They'll cook in the savory gravy and become tender and flavorful. Increase the cooking time by 30 minutes to ensure they're fully cooked.
- Spicy Kick: Add 1-2 teaspoons of red pepper flakes or a chopped jalapeño to the roast before cooking. The heat will infuse into the gravy, giving the dish a subtle warmth. Adjust the amount to your preference.
- Herb Swap: Instead of garlic-herb compound butter, use a mixture of softened butter, fresh rosemary, and thyme. This gives a more herbal, pine-like flavor that pairs beautifully with the beef. You can also add a sprig of rosemary to the slow cooker during cooking.
- No-Noodle Option: Skip the egg noodles and serve the beef over creamy mashed potatoes, polenta, or roasted vegetables. The rich gravy is delicious over any starch, and it's a great way to change up the meal.

- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little beef broth or water to restore the sauce's consistency.
Leftover beef and gravy can be stored in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if needed to loosen the gravy.
The compound butter can be made up to a week ahead and kept chilled. You can also assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate.
In the morning, simply place the insert in the slow cooker and cook as directed—just add 30 minutes to the cooking time to account for the cold start.
Serving ideas
Serve this slow-cooker beef roast over buttered egg noodles for a classic, comforting meal. The noodles soak up the rich gravy, and the tender beef and mushrooms make every bite satisfying.
Alternatively, spoon the beef over mashed potatoes, rice, or crusty bread to soak up every last drop of sauce.
For a complete dinner, add a simple green salad or steamed green beans on the side. The dish is rich and savory, so a bright, acidic side like a lemon vinaigrette salad balances the flavors beautifully.
A glass of full-bodied red wine, such as Cabernet Sauvignon or Merlot, pairs well with the beef.

Slow-Cooker Garlic Butter Beef Roast with Mushrooms

Ingredients
- 3 1/2 lb beef bottom round roast
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 4 tbsp garlic-herb compound butter (cowboy butter), cut into medallions
- 12 oz buttered egg noodles, for serving
Instructions
- Place the beef bottom round roast in the center of the slow cooker. Sprinkle the dry onion soup mix evenly over the top of the roast. Scatter the halved cremini mushrooms around the sides of the roast, tucking them into any gaps.
- Place the four medallions of garlic-herb compound butter on top of the roast, spacing them evenly. They will melt during cooking and create a rich, savory gravy.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or until the roast is fork-tender and easily shreds. Do not lift the lid during the first 6 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- Once the roast is fork-tender, turn off the slow cooker. Remove the roast to a cutting board and let it rest for at least 3 minutes. Then shred the beef using two forks, discarding any large fat pieces. Return the shredded beef to the slow cooker and stir into the gravy.
- To serve, place a generous portion of buttered egg noodles on each plate. Spoon the shredded beef and mushrooms over the noodles, and ladle the garlic-herb butter gravy on top.
