Before you start

Before starting, thinly slice the onions and measure the other ingredients. Soften the cream cheese to room temperature for easy melting.

If using egg noodles, cook them according to package instructions, drain, and toss with butter to keep them from sticking. Have your slow cooker ready and all the ingredients within reach.

Ingredients at a glance (6)
  • 2 lb boneless turkey breast cutlets
  • 2 medium sweet onions (such as Vidalia), thinly sliced
  • 1 can (10.5 oz) condensed French onion soup
  • 8 oz cream cheese, softened
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese
  • 12 oz buttered egg noodles, cooked

Instructions

Layer and Set

  1. Layer the Ingredients
Place the turkey breast cutlets in the bottom of a 6-quart slow cooker in a single layer. Scatter the sliced sweet onions evenly over the turkey. Pour the condensed French onion soup over the onions, making sure to cover the turkey as much as possible.
Look for The turkey is covered with onions and soup.
Tip No need to stir; the layers will meld as they cook.
  2. Add Cheeses
Place the softened cream cheese block on top of the soup, and sprinkle the grated Parmigiano-Reggiano over everything. There is no need to mix; the cheeses will melt and blend during cooking.
Look for The cream cheese and Parmesan sit on top of the soup.
Tip Soften the cream cheese beforehand for even melting.

At this stage, the slow cooker contains raw turkey, onions, soup, and cheeses. The onions are scattered over the turkey, and the soup is poured over.

The cream cheese and Parmesan sit on top. The ingredients are layered but not mixed, ready for the slow cooking process to begin.

Slow Cook and Shred

  1. Slow Cook
Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the turkey is tender and shreds easily with a fork. The sauce should be bubbly and thickened.
Look for The sauce is bubbling and the turkey is fork-tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not lift the lid during cooking; the steam helps cook the turkey.
  2. Shred Turkey
Using two forks, shred the turkey breast directly in the slow cooker. Stir the shredded turkey into the sauce so it is well coated. The sauce will be creamy and full of caramelized onion ribbons.
Look for The turkey shreds easily and is coated in the creamy sauce.
Tip If the sauce seems too thin, leave the lid off for 10-15 minutes to reduce.

After cooking, the kitchen smells of caramelized onions and cheese. The sauce is bubbling and creamy, and the turkey is fork-tender. Shredding the turkey directly in the cooker allows it to soak up the sauce. The sauce should be thick enough to coat the back of a spoon.

Serve

  1. Serve Over Noodles
Spoon the hot turkey mixture over cooked buttered egg noodles. Serve immediately, spooning extra sauce over each portion.
Look for The creamy turkey and sauce are spooned over noodles.
Tip For a lighter option, serve over mashed potatoes or rice.

The final dish is a creamy, savory turkey mixture spooned over buttered noodles. The sauce is rich and velvety, with strands of sweet onion and melted cheese. Each bite is comforting and full of flavor. Serve immediately while hot.

Common mistakes

A common mistake is lifting the lid to check on the turkey, which lets heat escape and extends cooking time. Avoid this unless necessary.

Another mistake is using pre-shredded Parmesan, which often contains anti-caking agents and doesn't melt as smoothly. Also, be sure to shred the turkey well so the sauce coats every piece.

How to tell it’s done

The turkey is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork. The sauce should be bubbly and slightly thickened, with the onions fully softened and caramelized.

If the sauce is too thin, leave the lid off for 10–15 minutes to let it reduce. Taste and adjust seasoning with salt and pepper, if needed.

  • Poultry: 165°F (74°C) in the thickest part
