Tips for success
For a deeper flavor, you can sear the pork roast in a hot skillet with a small amount of oil before placing it into the slow cooker.
While this adds a step, the browning of the meat surface adds a richness that complements the onion soup mix exceptionally well. If you choose this route, be sure to deglaze the skillet with a splash of the broth to capture all the browned bits.
If you prefer a thicker sauce, you can remove the lid for the final 30 minutes of the cooking cycle. This allows some of the excess moisture to evaporate, concentrating the onion and beef flavors into a richer glaze that clings better to the shredded pork.
Always ensure the pork remains moist; if it seems to be drying out, keep the lid on until the very end.
Variations
- Cheesy French Onion Style: After shredding the pork, top individual servings with a slice of provolone or Gruyère cheese. Broil under the oven grill for one to two minutes until the cheese is melted and bubbling for a classic French onion flavor.
- Spicy Onion Pork: Add a teaspoon of red pepper flakes or a dash of your favorite hot sauce to the slow cooker along with the beef broth. This introduces a subtle heat that cuts through the richness of the pork and caramelized onions.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days.
- Freezer
- Freeze in a freezer-safe bag or container for up to 2 months.
- Reheat
- Thaw in the refrigerator overnight and reheat gently in a covered pan over low heat or in the microwave.
Store any leftovers in an airtight container to keep the meat from drying out. Place the container in the refrigerator as soon as it has cooled, but do not leave it on the counter for more than two hours. Properly stored, the pork will maintain its quality for up to three days in the refrigerator.
This dish is an excellent candidate for making ahead. The flavors often develop even further after sitting in the refrigerator overnight.
You can cook the roast completely, shred it, and store it in its juices. When ready to serve, simply reheat the desired portion gently on the stovetop or in the microwave until warmed through.
Serving ideas
Serve this shredded pork roast piled high on toasted rolls or buns for a classic sandwich experience. The soft texture of the meat and the sweetness of the onions pair perfectly with a crusty bread. You can also serve the pork over a bed of mashed potatoes or creamy polenta to soak up the flavorful juices.
For a lighter meal, consider serving the shredded pork over a crisp green salad or alongside roasted vegetables.
The savory, onion-forward flavor of the meat balances well with the brightness of fresh greens or the earthiness of roasted root vegetables. Regardless of the side, ensure you spoon plenty of the onion-rich cooking liquid over the meat before serving.

Slow Cooker French Onion Pork Roast for Easy Weeknight Dinners

Ingredients
- 3 lb pork roast
- 3 large yellow onions, sliced
- 1 packet onion soup mix
- 1 cup beef broth
Instructions
- Place the raw pork roast into the center of the slow cooker insert. Ensure the slow cooker is placed on a flat, stable surface away from water sources. Arrange the sliced yellow onions evenly around and on top of the roast to ensure they cook down into the juices.
- Open the packet of onion soup mix and distribute the seasoning evenly over the top of the onions and the pork. Pour the beef broth carefully into the slow cooker, aiming for the sides of the insert rather than rinsing the seasoning off the top of the roast. Cover the slow cooker with its lid.
- Cook the pork on low for 8 hours. Once finished, check that the internal temperature of the pork has reached 145°F (63°C). Remove the roast to a cutting board, let it rest for at least 10 minutes, and then shred the meat using two forks. Return the shredded meat to the cooker to toss with the softened onions and pan juices before serving.
