Tips for success
For the most flavorful sauce, use a good-quality beef au jus or broth—look for one with no added sugar or artificial flavors.
If you have time, sear the roast in a hot skillet with a little oil before adding it to the slow cooker; this adds a deep, caramelized flavor that elevates the whole dish. You can also add a splash of red wine or a teaspoon of Worcestershire sauce to the au jus for extra depth.
To develop even more flavor, let the cooked beef sit in the sauce for 20 to 30 minutes after shredding. This allows the meat to absorb the sauce and become even more succulent.
If the sauce tastes flat, stir in a teaspoon of apple cider vinegar or a pinch of salt. For a thicker gravy, whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the hot sauce, then simmer for a few minutes.
Variations
- Add Vegetables: Add 2 cups of baby carrots and 3 peeled and quartered potatoes to the slow cooker along with the au jus. They will cook in the sauce and become tender and flavorful. Increase the au jus to 1 1/2 cups to ensure enough liquid.
- Make It Spicy: Stir 1 teaspoon of smoked paprika and 1/2 teaspoon of cayenne pepper into the sour cream before dolloping. Or add a minced chipotle pepper in adobo sauce for a smoky heat. Serve with pickled jalapeños on the side.
- Herb Swap: Omit the rosemary and use 8 sprigs of fresh thyme and 1 bay leaf. Or use 2 teaspoons of dried herbes de Provence mixed with the sour cream. The flavor will be slightly different but equally delicious.
- Creamy Mushroom Version: Add 8 oz of sliced cremini mushrooms along with the au jus. The mushrooms will release their liquid and absorb the sauce, adding an earthy depth. Use 1/2 cup of beef broth instead of au jus if you prefer a lighter sauce.

Store leftover shredded beef in an airtight container with some of the sauce. It will keep in the refrigerator for up to 4 days. The flavors continue to meld, making it even better the next day. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the sauce has thickened too much.
This recipe is perfect for meal prep. Cook the roast as directed, then shred and store it in the refrigerator for up to 4 days. You can also freeze the shredded beef in portion-sized containers for up to 3 months.
To serve, thaw overnight in the refrigerator and reheat gently. The sauce may separate slightly after freezing, but a good stir will bring it back together.
Serving ideas
Serve the shredded beef over steamed white rice, as shown in the video, or try it over mashed potatoes, egg noodles, or creamy polenta. The rich, tangy sauce is also delicious spooned over roasted vegetables or crusty bread for dipping. For a lighter meal, serve the beef on a bed of greens with a simple vinaigrette.
This dish pairs well with a crisp green salad or steamed green beans to balance the richness. For a low-carb option, serve it over cauliflower rice or zucchini noodles.
Leftovers can be turned into tacos, sandwiches, or a hearty hash the next day. Garnish with a few fresh thyme leaves or a sprinkle of flaky sea salt before serving, if desired.

Slow-Cooker Dijon Cream Chuck Roast with Rosemary and Thyme

Ingredients
- 3 1/2 lb beef chuck roast
- 12 garlic cloves, smashed
- 4 sprigs fresh rosemary
- 6 sprigs fresh thyme
- 1/2 cup sour cream
- 3 tbsp whole-grain Dijon mustard
- 1 cup beef au jus
- Steamed white rice, for serving
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker. Scatter the smashed garlic cloves over the top of the roast. Lay the fresh rosemary and thyme sprigs on and around the meat, tucking a few underneath for even flavor.
- Dollop the sour cream over the top of the roast, spreading it slightly with the back of a spoon. Add the whole-grain Dijon mustard in small spoonfuls over the sour cream.
- Pour the beef au jus along the side of the roast, being careful not to wash off the sour cream and mustard topping. The liquid should come about halfway up the roast.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the beef is fork-tender and shreds easily. The meat should be cooked through to at least 145°F (63°C) for safety. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest in the cooking liquid for at least 10 minutes. This allows the juices to redistribute and makes the meat easier to shred.
- Using two forks, shred the beef directly in the slow cooker, mixing it with the garlic, herbs, and sauce. Discard the rosemary and thyme stems if desired.
- Spoon the shredded beef and sauce over steamed white rice. Serve hot, with extra sauce spooned over the top.
