Tips for success

For the best flavor, use a well-marbled chuck roast and don't trim all the fat—it adds moisture and taste. If you have time, searing the roast in a hot skillet before adding it to the slow cooker can add extra depth, but it's not necessary.

The recipe is designed to be hands-off, so feel free to skip that step. Make sure to use whole-grain Dijon for texture, but smooth Dijon will still work.

To thicken the gravy, remove the beef and vegetables, then whisk in a slurry of 2 tablespoons cornstarch and 2 tablespoons cold water. Cook on high for 10-15 minutes until thickened. For a richer sauce, stir in a tablespoon of butter at the end. Always taste and adjust seasoning before serving—the au jus can be salty, so go easy on the salt initially.

Variations

  • Add Herbs: Tuck a few sprigs of fresh thyme or rosemary into the pot before cooking. The herbs will infuse the gravy with a subtle earthy aroma. Remove them before serving, or leave them for a rustic look.
  • Spicy Kick: Stir 1 teaspoon of smoked paprika or a pinch of cayenne into the sour cream mixture for a smoky, spicy twist. This works especially well if you're serving a crowd that likes heat.
  • Balsamic Glaze: Drizzle 2 tablespoons of balsamic vinegar over the roast before cooking. The vinegar adds a sweet-tart note that complements the Dijon and cream beautifully.
  • Mushroom Medley: Replace half the carrots with 1 cup of sliced cremini mushrooms. Sauté them briefly in a skillet before adding to the slow cooker to deepen their flavor and prevent them from becoming too watery.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently, adding a splash of broth if needed.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little beef broth or water to loosen the gravy if it has thickened.

Store leftover roast in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.

Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much. The dish freezes well for up to 3 months; thaw overnight in the fridge before reheating.

You can assemble the entire dish the night before: place the roast, shallots, carrots, sour cream, mustard, and au jus in the slow cooker insert, cover, and refrigerate.

In the morning, place the insert in the slow cooker and cook on low for 8 hours. This makes it even easier to get dinner going on a busy day. Just make sure to allow extra time for the insert to come to room temperature before heating.

Serving ideas

This roast is wonderfully versatile. Serve it over steamed white rice, as shown, or with mashed potatoes, egg noodles, or creamy polenta. The gravy is the star, so make sure to have something to soak it up.

Crusty bread or dinner rolls are perfect for wiping the plate clean. For a low-carb option, serve over cauliflower rice or alongside roasted vegetables.

The leftovers are just as good, if not better. Use them to make sandwiches on toasted buns with a little extra mustard, or pile the beef onto baked potatoes with a spoonful of gravy. You can also stir the leftovers into a pot of cooked pasta for a quick weeknight dinner. The dish is hearty and satisfying, so a little goes a long way.

Frequently asked questions

Can this recipe be made in an Instant Pot?
Yes, the recipe can be adapted for a pressure cooker. Sear the roast on sauté mode, then add the remaining ingredients. Cook on high pressure for 60-70 minutes, then let the pressure release naturally for 15 minutes. Shred the beef and finish as directed.
Why is the gravy thin?
If the gravy is thinner than desired, remove the beef and vegetables and set aside. Whisk together 2 tablespoons cornstarch with 2 tablespoons cold water, then stir into the liquid in the slow cooker. Cook on high for 10-15 minutes until thickened.
Can this be made without sour cream?
Sour cream adds creaminess and tang, but you can substitute full-fat Greek yogurt or crème fraîche. For a dairy-free version, use coconut cream, but note that the flavor will change slightly.
How long can leftovers stay in the fridge?
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much.
Can this recipe be doubled?
Yes, you can double the ingredients if you have a large enough slow cooker (at least 8 quarts). Keep the cooking time the same, but make sure the pot is not more than two-thirds full to ensure even cooking.

Slow-Cooker Dijon Cream Chuck Roast

Shredded beef chuck roast with creamy Dijon gravy in a slow cooker

Ingredients

  • 3 1/2 lb beef chuck roast
  • 8 whole peeled whole shallots
  • 2 cups baby carrots
  • 1 cup sour cream
  • 3 tbsp whole-grain Dijon mustard
  • 1 cup beef au jus
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Place the beef chuck roast in the center of a 6-quart slow cooker. Scatter the peeled whole shallots and baby carrots around the roast. Season the beef with kosher salt and black pepper.
  2. In a small bowl, stir together the sour cream and whole-grain Dijon mustard. Dollop the mixture over the top of the roast and vegetables. Pour the beef au jus along the side of the pot, not directly over the cream.
  3. Cover the slow cooker and cook on low for 8 hours, or until the beef is fork-tender and shreds easily. Avoid lifting the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
  4. Once the beef is fully tender, transfer it to a cutting board. Use two forks to shred the meat into large chunks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir gently to coat with the gravy.
  5. Stir the shredded beef into the creamy Dijon gravy. Taste and adjust the seasoning with additional salt and pepper if needed. The gravy should be thick and velvety, clinging to the meat and vegetables.
  6. Turn off the slow cooker and let the beef rest in the warm pot for at least 5 minutes before serving. This allows the juices to redistribute and the gravy to settle.
  7. Spoon steamed white rice onto plates. Top with a generous portion of the shredded beef, shallots, and carrots, and ladle extra gravy over the top. Serve hot.
