Tips for success
For the most flavorful results, season the brisket generously with salt and black pepper before adding the other ingredients. The long cooking time mellows the seasoning, so don't be shy.
If you prefer a thicker gravy, mix two tablespoons of cornstarch with two tablespoons of cold water and stir it into the sauce during the last 30 minutes of cooking.
This recipe is endlessly adaptable. You can add sliced onions or shallots under the brisket for extra sweetness, or a splash of Worcestershire sauce for depth.
For a touch of brightness, stir in a tablespoon of chopped fresh parsley just before serving. Leftovers make fantastic sandwiches on crusty bread with a little of the gravy spooned over.
Variations
- Onion and Mushroom: Add a layer of thinly sliced onions and cremini mushrooms under the brisket. They will cook down into a savory base that enhances the gravy. Sauté them briefly in a pan before adding to the slow cooker for extra depth.
- Spicy Chipotle: Stir one minced chipotle pepper in adobo sauce into the sour cream and mustard mixture for a smoky, spicy kick. Reduce the mustard to 2 tablespoons to balance the heat. Serve with pickled onions and cilantro.
- Honey-Mustard Twist: Add 2 tablespoons of honey to the sour cream and mustard mixture for a sweet-and-tangy glaze. The honey caramelizes slightly during cooking, adding a subtle sweetness that pairs well with the herbs. Reduce the au jus to 3/4 cup to keep the sauce thick.
- Red Wine Braise: Replace half of the au jus with 1/2 cup of dry red wine, such as Cabernet Sauvignon. The wine adds richness and complexity to the sauce. Add a bay leaf and a few black peppercorns for extra aroma. Remove the bay leaf before serving.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a covered pot over low heat, stirring occasionally, or in the microwave in 30-second bursts, adding a splash of broth if needed.
Store leftover brisket and sauce in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the sauce has thickened too much.
This dish is ideal for making ahead. Cook the brisket as directed, then let it cool completely before refrigerating. The next day, the fat will have solidified on top and can be easily removed.
Reheat the brisket and sauce together in a covered pot over low heat, stirring occasionally, until heated through. It's even better the second day.
Serving ideas
Serve the shredded brisket over steamed white rice, spooning plenty of the creamy Dijon gravy over the top. The rice soaks up the sauce beautifully.
For a low-carb option, serve it over cauliflower rice or alongside roasted vegetables. A simple green salad with a tangy vinaigrette would also complement the richness.
For a heartier meal, pile the brisket onto soft rolls or slider buns and top with a spoonful of the gravy for a delicious sandwich. Leftover brisket can also be stirred into pasta or used as a filling for tacos. The possibilities are endless, but the classic rice bowl is the most satisfying.

Slow-Cooker Dijon Cream Beef Brisket with Rosemary and Thyme

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 12 cloves garlic, smashed
- 4 sprigs fresh rosemary
- 6 sprigs fresh thyme
- 1 cup sour cream
- 1/4 cup whole-grain Dijon mustard
- 1 cup beef au jus
- steamed white rice, for serving
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Scatter the smashed garlic cloves and fresh rosemary and thyme sprigs over the top of the meat.
- Dollop the sour cream and whole-grain Dijon mustard over the top of the brisket. Pour the beef au jus along the side of the slow cooker, not directly over the seasonings.
- Cover the slow cooker and cook on low for 8 to 10 hours, until the brisket is fork-tender. The internal temperature should reach at least 145°F (63°C) for food safety, but it will be much higher, around 190°F (88°C), for shredding. Let it rest for 3 minutes before slicing.
- Transfer the brisket to a cutting board and let it rest for at least 3 minutes. Then shred the meat with two forks, discarding any large fat pieces. Skim excess fat from the sauce in the slow cooker, if desired.
- Return the shredded beef to the slow cooker and stir it into the sauce. Serve hot over steamed white rice, spooning extra gravy over the top.
