Tips for success
For a deeper flavor, you can briefly sauté the sliced mushrooms in a pan with a little butter before adding them to the slow cooker, though this is optional.
This extra step helps to intensify the earthy mushroom notes and improves the overall texture of the final sauce.
If you find the sauce is too thin at the end of the cooking time, you can remove the chicken and stir in a small amount of cornstarch slurry to the remaining liquid in the pot. Heat it on high for a few minutes until it thickens to your desired consistency.
Variations
- Herbed Mushroom Chicken: Add a teaspoon of dried thyme or rosemary to the onion seasoning mix to bring an earthy, herbal note that complements the mushrooms and Swiss cheese beautifully.
- Garlicky Mushroom Chicken: Incorporate two cloves of minced garlic into the layering process to add a pungent, aromatic depth that pairs perfectly with the creamy soup base.
Storage and make-ahead
- Fridge
- Keep in a sealed container in the refrigerator for up to 3 days.
- Freezer
- Store in a freezer-safe container for up to 1 month. Thaw in the refrigerator before reheating.
- Reheat
- Reheat gently in a saucepan over low heat or in the microwave until the chicken is hot throughout.
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Ensure the chicken has cooled to room temperature, but do not leave it out for more than 2 hours to maintain food safety standards. The sauce may thicken further when stored, which is normal.
You can prepare the ingredients in the slow cooker insert the night before and store it in the refrigerator, covered.
When ready to cook, simply place the insert into the slow cooker base and proceed with the cooking time. Do not add the cheese until the final step.
Serving ideas
Serve this chicken over a bed of fluffy white rice, mashed potatoes, or buttered egg noodles to soak up the delicious creamy mushroom sauce. A side of steamed green beans or a crisp garden salad provides a refreshing contrast to the richness of the main dish.
Plate the chicken breasts individually, spooning plenty of the creamy mushroom sauce and the melted cheese over the top.
Garnish with a sprinkle of fresh parsley or cracked black pepper if desired, though the dish is perfectly flavorful and complete as it is straight from the cooker.
