Before you start

Prepare the workspace by gathering all ingredients. Ensure the slow cooker insert is clean and dry. If using a slow cooker liner, insert it now to make cleanup even easier later.

Slice the fresh mushrooms into uniform pieces if they are not already sliced. Have the onion seasoning packet and soup ready to go so that assembling the dish takes only a few minutes before starting the cooking cycle.

Ingredients at a glance (5)
  • 4 pieces boneless skinless chicken breasts
  • 8 oz sliced mushrooms
  • 1 packet onion seasoning mix
  • 1 can cream of mushroom soup
  • 4 slices Swiss cheese

Instructions

Preparation and layering

  1. Layering the slow cooker
Place the raw chicken breasts at the bottom of the slow cooker insert. Scatter the sliced mushrooms evenly over the top of the chicken. Sprinkle the onion seasoning mix over the mushrooms to ensure the flavor distributes well during the cooking process.
Look for ensure chicken is in a single layer
Tip Keep the chicken pieces in a single layer for the most even cooking results.

At this stage, the slow cooker contains the raw ingredients neatly arranged. The chicken should be at the base, covered by the mushrooms and seasoning.

Ensure the countertop is clean and the slow cooker is properly connected to a power source before beginning the cooking process for a smooth start.

Cooking the chicken

  1. Adding the creamy sauce
Pour the cream of mushroom soup over the layered chicken and mushrooms. Cover the slow cooker with its lid and set to cook on low for 4 to 6 hours or on high for 2 to 3 hours until the chicken is fully cooked.
Look for soup should be poured evenly over the contents
Tip Adding the soup last helps keep the chicken moist as it cooks in the liquid.

During the cooking phase, the slow cooker should be emitting a savory aroma. You should hear a soft bubbling sound as the soup heats up. Check that the lid is tightly sealed to maintain the necessary temperature and moisture levels for the chicken to cook thoroughly without drying out.

Melting the cheese

  1. Adding cheese and serving
Once the cooking time is complete, verify that the chicken has reached an internal temperature of 165°F (74°C). Place the Swiss cheese slices over the top of each chicken breast. Cover the pot again for 5 to 10 minutes until the cheese is melted and bubbly. Let the chicken rest for 3 minutes before serving.
Look for cheese should be completely melted
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a digital thermometer to confirm the chicken is done before adding the cheese.

The final stage involves the addition of the Swiss cheese. The cheese should soften and melt over the chicken breasts within a few minutes of placing it in the pot. Once the cheese is fully melted and bubbly, the dish is ready to be removed and plated for immediate service.

Common mistakes

A common mistake is overcrowding the slow cooker, which can lead to uneven cooking. Ensure the chicken pieces are spread out in a single layer.

Another mistake is lifting the lid too frequently, which releases the heat and extends the required cooking time significantly. Keep the lid closed until the final stages of the process.

How to tell it’s done

The chicken is done when it is opaque throughout and has reached an internal temperature of 165°F (74°C) at the thickest part of the breast.

The sauce should be thick and creamy, and the mushrooms should be tender. Always verify the temperature with a digital thermometer to ensure safety before serving the final dish.

  • Poultry: 165°F (74°C) in the thickest part
