Tips for success

For a deeper flavor, you can sear the pork roast in a hot skillet with a little oil before placing it into the slow cooker. While this is an optional step, it creates a golden-brown crust that adds a complex, caramelized note to the finished dish. If you choose to sear, ensure the skillet is very hot and the pork is patted dry first.

If you find the sauce is too thin after adding the cream, you can remove the pork and set the slow cooker to high for 10 to 15 minutes to reduce the liquid slightly.

Alternatively, stir in a small amount of cornstarch slurry if you prefer a much thicker, gravy-like consistency for your final sauce. Always whisk thoroughly to avoid any lumps.

Variations

  • Herbed Mushroom Pork: Add two sprigs of fresh thyme or rosemary during the cooking process. The woody herbs infuse the sauce with an aromatic quality that pairs beautifully with the earthy mushrooms and savory pork.
  • Garlic-Infused Mushroom Pork: Incorporate four cloves of smashed garlic during the assembly phase. The garlic mellows during the long, slow cook, providing a subtle, sweet depth that complements the shallots and white wine base.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 3 days.
Freezer
Freeze in a freezer-safe container for up to 2 months.
Reheat
Thaw in the refrigerator overnight and reheat gently in a covered pan on the stovetop over low heat until warmed through.

Store any leftovers in an airtight container to keep the meat moist. The pork and sauce can be kept together in the refrigerator for up to three days. When storing, ensure the sauce fully covers the pork slices to prevent them from drying out, and always allow the dish to cool completely before placing it in the refrigerator.

This dish is an excellent candidate for making ahead, as the flavors often improve after sitting in the refrigerator for a day. You can prepare the entire dish, let it cool, and store it in the refrigerator.

When you are ready to serve, gently reheat it on the stovetop or in the oven, adding a splash of water if the sauce has thickened too much.

Serving ideas

Serve this dish over a bed of mashed potatoes, buttered egg noodles, or steamed rice to soak up the rich, creamy mushroom sauce.

A side of roasted root vegetables or a crisp green salad with a sharp vinaigrette provides a nice textural contrast to the soft, tender pork and velvety sauce, creating a balanced and satisfying meal for any occasion.

For a more elegant presentation, arrange the sliced pork in a fan pattern on a large serving platter. Spoon the creamy mushroom sauce generously over the center, allowing it to pool slightly on the sides.

Garnish with a few fresh herbs like parsley or chives if desired to add a bright pop of color and freshness to the final presentation.

Frequently asked questions

Can this recipe be made with other cuts of pork?
Yes, pork shoulder or Boston butt are excellent alternatives to a standard loin roast. These cuts have more fat and connective tissue, which break down during the long cooking process to produce exceptionally tender results. Adjust the cooking time if using a much larger or smaller roast to ensure the internal temperature reaches the safe 145°F.
Why is it important to let the meat rest?
Resting the meat is essential because it allows the muscle fibers to relax and the juices to redistribute throughout the roast. If you slice the pork immediately after removing it from the slow cooker, the flavorful juices will escape onto the cutting board, resulting in drier, less succulent meat. A 10-minute rest ensures every slice remains juicy.
Can the cream be added at the beginning?
It is not recommended to add the heavy cream at the beginning of the cooking process. High heat over a long duration can cause dairy to curdle or separate, resulting in a grainy sauce. Adding the cream at the very end ensures a smooth, velvety, and stable sauce that maintains its rich, luxurious texture and appearance when served.

Ingredients

  • 2 lb pork roast
  • 8 oz pleurotus mushrooms, torn
  • 2 shallots, thinly sliced
  • 1 tbsp veal stock powder
  • 1/4 cup dry white wine
  • 1/2 cup heavy cream

Instructions

  1. Place the raw pork roast into the bottom of the slow cooker. Scatter the torn pleurotus mushrooms and sliced shallots over the top of the meat. Sprinkle the veal stock powder evenly over the mushrooms and shallots, then pour the white wine over the entire mixture.
  2. Cover the slow cooker with its lid. Cook on the low setting for approximately 8 hours, or until the pork is fork-tender and reaches an internal temperature of 145°F (63°C). Once cooked, let the meat rest for at least 3 minutes before slicing.
  3. Remove the pork from the slow cooker and let it rest for at least 10 minutes. Stir the heavy cream into the remaining juices in the slow cooker to create a velvety sauce. Slice the pork and serve immediately, coated generously with the creamy mushroom sauce.
