Tips for success

For extra flavor, consider browning the meatballs in a skillet before adding them to the slow cooker. This adds a nice crust and deepens the beefy flavor.

You can also add a splash of white wine to the sauce for extra depth. To prevent the pasta from becoming too soft, cook on low rather than high, and check it at the 3-hour mark.

If the sauce seems too thin at the end of cooking, remove the lid and cook on high for an additional 15-30 minutes to reduce it. Conversely, if the dish seems too dry, add a splash of chicken broth or milk.

This recipe is forgiving and can be adjusted to your preferred consistency. Let the dish rest for a few minutes before serving to allow the sauce to thicken slightly.

Variations

  • Spicy Sausage Version: Replace half the meatballs with spicy Italian sausage, removed from its casings and rolled into small balls. Add a pinch of red pepper flakes to the sauce for extra heat.
  • Chicken and Broccoli: Use cooked chicken breast pieces instead of meatballs, and add 2 cups of broccoli florets during the last 30 minutes of cooking for a veggie-packed version.
  • Four-Cheese Blend: Substitute the mozzarella with a blend of provolone, fontina, and Parmesan for a more complex cheese flavor. Add an extra 1/2 cup of shredded cheese if desired.
  • Mushroom and Spinach: Add 8 oz of sliced mushrooms and 2 cups of fresh spinach to the slow cooker along with the other ingredients. The spinach will wilt into the sauce, adding color and nutrients.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of milk or broth to restore creaminess.
Freezer
Freeze leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in the microwave in 1-minute intervals, stirring between, or in a saucepan over medium-low heat until hot. Add a splash of milk or broth if needed.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will absorb some of the sauce as it sits, so you may want to add a little milk or broth when reheating to loosen it. Reheat gently in the microwave or on the stovetop until hot.

This recipe can be assembled ahead of time and refrigerated for up to 24 hours before cooking. Simply layer all the ingredients in the slow cooker insert, cover, and refrigerate.

When ready to cook, place the insert in the slow cooker and cook as directed, adding 30 minutes to the cooking time. This is perfect for busy mornings.

Serving ideas

Serve this creamy cavatappi as a main dish with a simple green salad and crusty bread to soak up the extra sauce. It's also delicious with a side of roasted vegetables or garlic bread. For a festive touch, garnish with chopped fresh parsley or basil before serving.

This dish is hearty enough to be a complete meal on its own, but it pairs beautifully with a light appetizer like a caprese salad or antipasto platter.

For a family-style dinner, serve it directly from the slow cooker, allowing everyone to help themselves. The leftovers are just as delicious the next day.

Frequently asked questions

Can the pasta be cooked separately and added later?
Yes, you can cook the pasta separately and add it during the last 30 minutes of cooking. This will give you more control over the pasta's texture, but the dish will still be creamy. If you choose this method, reduce the amount of sauce slightly, as the pasta won't absorb as much.
Can this recipe be made gluten-free?
Yes, use gluten-free pasta and ensure the meatballs and cream sauce are gluten-free. Many brands offer gluten-free meatballs and pasta. Check the labels to be sure. The rest of the ingredients are naturally gluten-free.
Why is the sauce too thin at the end?
If the sauce is too thin, it may be because the pasta didn't absorb enough liquid or the slow cooker was too hot. To thicken, remove the lid and cook on high for an additional 15-30 minutes. You can also stir in a slurry of cornstarch and water.
Can this dish be made without cream cheese?
Yes, you can omit the cream cheese, but the sauce will be less creamy. To compensate, add an extra 1/2 cup of heavy cream or a cup of shredded mozzarella. The dish will still be delicious, but the texture will be different.
How can the meatballs be kept from falling apart?
Choose dense, homestyle meatballs that hold their shape. If making your own, include breadcrumbs and egg as binders. Avoid stirring the mixture too vigorously during cooking. Gently fold the ingredients when serving.
