Tips for success
For the most flavorful result, use a good-quality garlic herb butter — it makes a noticeable difference. If you don't have it, mix 2 tablespoons of softened butter with 1/2 teaspoon garlic powder and 1 teaspoon dried Italian herbs.
You can also add a splash of chicken broth if the sauce seems too thick, but this recipe is designed to be rich and creamy without extra liquid.
To keep the green beans from getting too soft, add them halfway through the cooking time instead of at the beginning.
If you prefer a thicker sauce, remove the lid for the last 30 minutes of cooking to let some of the liquid evaporate. For an extra touch of freshness, sprinkle chopped parsley or chives over the top before serving.
Variations
- Add Mushrooms: Add 8 oz sliced cremini mushrooms along with the green beans. They'll soften and soak up the creamy sauce, adding an earthy flavor.
- Spicy Kick: Stir in 1/2 teaspoon red pepper flakes or a diced jalapeño with the soup for a gentle heat that balances the richness.
- Swap the Protein: Use boneless skinless chicken breasts instead of thighs, but reduce the cooking time to 3-4 hours to avoid drying them out.
- Add Bacon: Sprinkle 4 slices of cooked, crumbled bacon over the top before serving for a smoky, salty crunch.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the cooled chicken and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools — that's normal. Reheat gently on the stovetop or in the microwave, adding a splash of broth or milk if needed to loosen the sauce.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time since the ingredients start cold.
Serving ideas
Serve this creamy chicken and green bean mixture over a bed of al dente penne pasta tossed with garlic butter.
The pasta soaks up the rich sauce, making every bite satisfying. For a low-carb option, serve it over cauliflower rice or with crusty bread to mop up the sauce.
This dish also pairs well with a simple green salad dressed with lemon vinaigrette to cut through the richness. For a heartier meal, add a side of roasted potatoes or garlic bread. The leftovers are even better the next day — the flavors meld together overnight.

Slow Cooker Creamy Mozzarella Green Bean Chicken Thighs

Ingredients
- 1 1/2 lb boneless skinless chicken thighs
- 1 lb fresh green beans, trimmed
- 1 can (10.5 oz) condensed cream of onion soup
- 1 1/2 cups shredded whole-milk mozzarella cheese
- 2 tbsp garlic herb butter
- cooked al dente garlic butter penne pasta, for serving
Instructions
- Place the boneless skinless chicken thighs evenly across the bottom of a 6-quart slow cooker. Scatter the trimmed green beans around and between the chicken pieces. Dollop the condensed cream of onion soup over the center of the chicken and beans.
- Sprinkle the shredded mozzarella evenly over the top of the chicken and green beans. Place the garlic herb butter pats on top of the cheese.
- Cover the slow cooker with the lid. Cook on LOW for 4 to 5 hours, or until the chicken thighs are fork-tender and easily pull apart. Do not lift the lid during the first 3 hours to keep the heat steady.
- After 4 hours, check the chicken with an instant-read thermometer. Insert it into the thickest part of a thigh — it should read at least 165°F (74°C). If not, cover and cook for another 30 minutes.
- Using two forks, gently shred the chicken thighs right in the slow cooker. Stir the shredded chicken and green beans into the creamy sauce until everything is well coated.
- Spoon the creamy chicken and green bean mixture over a bed of cooked al dente garlic butter penne pasta on a plate. Serve hot.
