Before you start
Before you start, trim the green beans if needed and pat the chicken thighs dry with paper towels. Measure out the shredded mozzarella and have the cream of onion soup and garlic herb butter ready.
If you plan to serve the dish over pasta, cook the penne al dente according to package directions and toss it with a little garlic butter while the slow cooker finishes.
Ingredients at a glance (6)
- 1 1/2 lb boneless skinless chicken thighs
- 1 lb fresh green beans, trimmed
- 1 can (10.5 oz) condensed cream of onion soup
- 1 1/2 cups shredded whole-milk mozzarella cheese
- 2 tbsp garlic herb butter
- cooked al dente garlic butter penne pasta, for serving
Instructions
Layer and Forget
- Layer the IngredientsPlace the boneless skinless chicken thighs evenly across the bottom of a 6-quart slow cooker. Scatter the trimmed green beans around and between the chicken pieces. Dollop the condensed cream of onion soup over the center of the chicken and beans.Look for The chicken covers the bottom in a single layer, with green beans tucked around.Tip No need to stir — the layers will meld as they cook.
- Add Cheese and ButterSprinkle the shredded mozzarella evenly over the top of the chicken and green beans. Place the garlic herb butter pats on top of the cheese.Look for Cheese covers most of the surface, with butter pats melting into it.Tip Cut the butter into small pieces if needed for even distribution.
At the end of this phase, the slow cooker contains raw chicken thighs, green beans, soup, cheese, and butter arranged in even layers.
The ingredients are still separate, but the butter is starting to melt, and the soup is beginning to spread. The raw chicken has a fresh, clean scent, and the cheese looks like a snowy blanket over the top.
Low and Slow
- Cover and Cook Low and SlowCover the slow cooker with the lid. Cook on LOW for 4 to 5 hours, or until the chicken thighs are fork-tender and easily pull apart. Do not lift the lid during the first 3 hours to keep the heat steady.Look for The sauce is bubbling gently around the edges, and the chicken is tender.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Cooking on LOW keeps the chicken juicy and the sauce creamy.
- Check the Chicken TemperatureAfter 4 hours, check the chicken with an instant-read thermometer. Insert it into the thickest part of a thigh — it should read at least 165°F (74°C). If not, cover and cook for another 30 minutes.Look for The thermometer reads 165°F (74°C) or higher.Safe temperature 165°F (74°C) internal temperature (poultry)Tip If the chicken is not done, continue cooking and check again in 15-minute intervals.
After several hours on LOW, the slow cooker is filled with a gently bubbling, creamy sauce. The chicken is tender and pulls apart easily, the green beans are soft but still hold their shape, and the cheese has melted into the sauce, giving it a glossy, velvety sheen. The aroma of garlic, herbs, and onion fills the kitchen.
Shred and Serve
- Shred the ChickenUsing two forks, gently shred the chicken thighs right in the slow cooker. Stir the shredded chicken and green beans into the creamy sauce until everything is well coated.Look for The chicken pulls apart easily and the sauce is thick and creamy.Tip Shred just until the chicken is in bite-size pieces — don't overmix.
- Serve Over PastaSpoon the creamy chicken and green bean mixture over a bed of cooked al dente garlic butter penne pasta on a plate. Serve hot.Look for Steam rises from the creamy sauce as it's spooned over the pasta.Tip For extra richness, drizzle a little of the sauce over the pasta before topping.
The shredded chicken and green beans are fully coated in the rich, creamy sauce. The sauce is thick enough to cling to a spoon, and the steam rises in fragrant wisps. When spooned over pasta, the dish looks like a cozy, indulgent bowl of comfort — creamy, cheesy, and ready to be devoured.
Common mistakes
One common mistake is lifting the lid too often during cooking — this lets out heat and extends the cooking time. Another is overcooking the green beans, which can make them mushy; check them at the 4-hour mark.
Using chicken breasts instead of thighs can lead to dry, tough meat. Also, avoid adding extra liquid — the soup and butter provide enough moisture. Finally, don't skip the temperature check; it's the only way to ensure the chicken is safe to eat.
How to tell it’s done
The dish is done when the chicken thighs are fork-tender and easily pull apart, and an instant-read thermometer inserted into the thickest part of a thigh registers at least 165°F (74°C).
The green beans should be tender but not mushy, and the sauce should be bubbling gently around the edges. If the sauce seems too thin, let it cook uncovered for an additional 15 to 20 minutes to thicken.
- Poultry: 165°F (74°C) in the thickest part
