Tips for success
For the most tender beef, always choose a well-marbled cut like chuck. The fat renders during cooking and keeps the meat moist. If you have time, searing the beef in a hot skillet before adding it to the slow cooker adds extra depth, but it’s not required.
For a thicker sauce, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir into the sauce at the end, then cook for 10 more minutes.
Pearl onions can be tedious to peel; to speed things up, blanch them in boiling water for 1 minute, then drain and slip off the skins. Frozen pearl onions are a great shortcut.
If you want more vegetables, add halved baby potatoes or mushrooms in the last 2 hours of cooking. The sauce is also delicious spooned over rice or egg noodles if you’re not using mashed potatoes.
Variations
- Spicy Kick: Add 2 sliced jalapeños or 1 teaspoon red pepper flakes with the other ingredients for a subtle heat that builds as it cooks. The butter and au jus balance the spice.
- Vegetable Boost: Add 2 cups halved baby potatoes or 1 cup sliced mushrooms during the last 2 hours of cooking. They absorb the sauce and become tender and flavorful.
- Herb Swap: Use a different flavored butter, such as rosemary-garlic or chive butter, to change the herb profile. The au jus mix still provides the savory backbone.
- Beef and Broccoli: Replace the carrots with 2 cups of broccoli florets added during the last 30 minutes of cooking. The broccoli stays bright and crisp-tender, adding a fresh contrast.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat with a splash of broth or water to loosen it.
- Freezer
- Freeze the cooled beef and sauce in a freezer-safe container for up to 3 months.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling. Add a little water or beef broth if needed.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken slightly as it cools. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the sauce seems too thick. The beef will still be tender and flavorful.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert into the slow cooker base and cook as directed.
This is a great make-ahead dinner for busy days. You can also cook the full recipe, then cool and refrigerate for up to 3 days before reheating.
Serving ideas
Serve the beef bites over a generous pile of creamy mashed potatoes, letting the sauce pool around the edges. The potatoes soak up the buttery au jus beautifully. A side of crusty bread or a simple green salad with a tangy vinaigrette balances the richness. This is comfort food at its finest, perfect for a cold evening.
For a lighter option, spoon the beef and vegetables over steamed rice or cauliflower mash. The sauce is also excellent over egg noodles or polenta.
Garnish with a sprinkle of fresh parsley or chives if you like, though the dish is plenty flavorful on its own. Leftovers make a fantastic filling for tacos or a topping for baked potatoes.

Slow Cooker Cowboy Butter Beef Bites

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 1 cup peeled pearl onions
- 2 cups crinkle-cut carrots
- 2 sticks garlic-herb cowboy butter, sliced
- 1 oz dry au jus mix (1 packet)
Instructions
- Place the cubed beef chuck into the bottom of a 6-quart slow cooker in an even layer. Scatter the pearl onions and crinkle-cut carrots over the beef, then lay the slices of garlic-herb cowboy butter on top. Sprinkle the dry au jus mix evenly over everything.
- Cover the slow cooker with its lid. Set it to cook on low for 6 to 8 hours, or on high for 3 to 4 hours. Do not open the lid during the first 4 hours of cooking to keep the heat steady.
- After the minimum cooking time, carefully remove the lid, tilting it away from you. Use a fork to test a piece of beef — it should shred easily and be fork-tender. The onions and carrots should be soft but still hold their shape. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the hot sauce for at least 3 minutes before serving. This allows the juices to redistribute and ensures the meat stays moist and tender.
- Spoon a generous portion of creamy mashed potatoes onto each plate. Ladle the beef, onions, carrots, and plenty of the golden butter-au jus sauce over the top. Serve hot.
