Tips for success
For the creamiest result, ensure the cream cheese is fully softened before adding it to the slow cooker. You can also cut it into small cubes to help it melt faster.
If you prefer a crispy top, transfer the cooked casserole to a baking dish and broil for 2–3 minutes until the cheese is golden and bubbly—though this is not shown in the video.
This recipe is incredibly forgiving. Feel free to add extra vegetables like diced bell peppers or onions, or swap the ham for cooked bacon.
The key is to keep the ratio of liquid to potatoes balanced so the casserole doesn't become too dry or too soupy. Taste the sauce before cooking and adjust the seasoning if needed.
Variations
- Vegetarian Version: Omit the ham and add a can of drained diced green chiles or a cup of frozen corn for extra flavor and texture. Use cream of mushroom soup instead of chicken for a vegetarian twist.
- Spicy Kick: Add a diced jalapeño or a teaspoon of hot sauce to the soup mixture for a spicy version. Use pepper jack cheese instead of Colby-Jack for an extra layer of heat.
- Breakfast Bake: Serve this casserole for breakfast with a side of fried eggs or fresh fruit. Add cooked, crumbled breakfast sausage instead of ham for a savory morning meal.
- Loaded Potato: Top the finished casserole with crispy bacon bits, chopped green onions, and a dollop of sour cream before serving. This turns it into a loaded baked potato experience.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of milk if needed to restore creaminess.
- Freezer
- Freeze the cooled casserole in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 1-2 minutes, or in a 350°F (175°C) oven for 15-20 minutes until hot and bubbly.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The casserole will thicken as it cools; reheat individual portions in the microwave or in a skillet over medium heat until warmed through. For best texture, reheat gently to avoid drying out the potatoes.
This dish is perfect for making ahead. Assemble the casserole in the slow cooker insert, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker and cook on low as directed.
You may need to add 30 minutes to the cooking time if starting from cold. Alternatively, cook the casserole completely, let it cool, and refrigerate for up to 2 days before reheating.
Serving ideas
Serve this hashbrown bake as a main course with a crisp green salad or steamed vegetables on the side. It's also wonderful as a hearty side dish alongside roasted chicken, pork chops, or grilled steak. The creamy, cheesy flavors pair well with bright, acidic sides like a tomato salad or pickles.
For a complete meal, consider adding a simple fruit salad or coleslaw. This casserole is also a hit at brunch—serve it with scrambled eggs and fresh fruit for a satisfying spread.
Garnish with chopped chives or parsley for a pop of color, though the video does not include them. Leftovers can be scooped into tortillas for a quick breakfast burrito.

Slow-Cooker Colby-Jack Sour Cream Hashbrown Bake

Ingredients
- 2 lb shredded russet hashbrowns
- 1 lb diced honey-glazed smoked ham
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup sour cream
- 8 oz cream cheese, softened
- 2 cups shredded Colby-Jack cheese
Instructions
- Place the shredded hashbrowns in the bottom of a 6-quart slow cooker. Spread them into an even layer. Scatter the diced ham evenly over the hashbrowns.
- In a medium bowl, stir together the condensed cream of chicken soup and sour cream until smooth. Pour the mixture over the hashbrowns and ham. Use a spoon to gently fold everything together, making sure the soup mixture coats the potatoes and ham.
- Place the softened cream cheese in the center of the slow cooker. Sprinkle the shredded Colby-Jack cheese evenly over the top, covering the cream cheese and the potato mixture.
- Cover the slow cooker and cook on low for 4 hours, or until the potatoes are tender and the cheese is melted and bubbly. Do not stir during cooking, as this can break up the potatoes.
- After 4 hours, insert a fork into the center of the casserole. The potatoes should be tender and easily pierced. If they are still firm, cover and cook for an additional 30 minutes.
- Turn off the slow cooker. Use a large spoon to scoop the casserole onto plates or a serving dish. The sauce should be creamy and the cheese stretchy. Serve immediately while hot.
