Tips for success

To achieve the absolute best texture, handle the cooked ribs with extreme care. Because they become so tender during the slow cooking process, lifting them out of the cooker too quickly can cause them to fall apart completely.

Use wide, sturdy tongs to support the middle of the ribs, or use two spatulas to lift them gently from the bottom when transferring them to a serving platter or cutting board.

If a crispy, charred finish is preferred, transfer the glazed ribs to a foil-lined baking sheet after brushing them with the barbecue sauce.

Place them under the oven broiler for three to five minutes until the sauce bubbles vigorously and caramelizes with dark, charred spots. Watch them closely during this step to prevent the sugars in the barbecue sauce from burning.

Variations

  • Spicy Cola Ribs: Mix a teaspoon of cayenne pepper or hot sauce into the cola before pouring it over the ribs to add a fiery kick that balances the sweetness.
  • Smoky Bourbon Glaze: Stir two tablespoons of bourbon into the barbecue sauce before brushing it over the ribs to create a rich, smoky, and complex caramelized glaze.

Storage and make-ahead

Fridge
Store cooled leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freeze in a heavy-duty freezer bag or airtight container for up to 3 months. Thaw in the fridge overnight before reheating.
Reheat
Reheat covered in a 325°F (163°C) oven for 15-20 minutes with a splash of water or extra sauce to keep them moist.

Allow any leftover ribs to cool completely at room temperature for no more than two hours before storing them. Place the cooled ribs in an airtight container, pouring any remaining sauce from the slow cooker over them to keep them moist. Store the container in the refrigerator for up to three to four days, or freeze them for longer preservation.

These ribs can easily be prepared ahead of time. Cook them through the slow cooking phase, then cool and refrigerate them in their juices. When ready to serve, place the ribs on a baking sheet, brush them generously with the barbecue sauce, and warm them in a 350°F (175°C) oven for fifteen to twenty minutes until heated through and caramelized.

Serving ideas

Serve these tender ribs hot, piled high on a large wooden board or serving platter. Provide extra barbecue sauce on the side for dipping, along with plenty of napkins or wet wipes, as eating these sticky ribs is a hands-on experience.

They pair wonderfully with classic barbecue sides like creamy coleslaw, buttery cornbread, baked beans, or crispy french fries.

For an elegant presentation, slice the warm rack of ribs between the bones into individual portions before serving. Arrange them in a stacked pattern on the platter and drizzle with any caramelized sauce remaining in the slow cooker.

A side of pickles or pickled red onions provides a bright, acidic contrast that cuts through the rich, sweet flavors of the pork.

Frequently asked questions

Can boneless pork ribs be used for this recipe?
Yes, boneless pork ribs can be used. However, because they lack bones to distribute heat and keep the meat structured, they may cook slightly faster. Monitor them closely after five hours on low.
Why did the ribs turn out tough instead of tender?
Tough ribs usually mean they have not been cooked long enough. Pork ribs contain a lot of connective tissue that requires several hours of low heat to break down. Continue cooking them until they are fork-tender.
Is it necessary to remove the silver skin?
Removing the silver skin is highly recommended. This tough membrane does not break down during cooking and prevents the flavors of the cola and barbecue sauce from fully penetrating the meat.

Ingredients

  • 4 lb pork baby back ribs, silver skin removed
  • 12 oz cola
  • 1 1/2 cups barbecue sauce

Instructions

  1. Place the portioned pork ribs into the slow cooker insert. Stand them upright against the walls of the cooker or stack them loosely to ensure the heat circulates evenly around the meat during the long cooking process.
  2. Pour the cola slowly over the arranged pork ribs. Direct the liquid down the side of the slow cooker insert rather than washing over the ribs directly, allowing the soda to pool at the bottom to form the cooking base.
  3. Cover the slow cooker with the lid. Cook the ribs on the low setting for seven to eight hours, or on the high setting for three to four hours, until the meat is tender and starts pulling away from the bones.
  4. Carefully brush the thick barbecue sauce over the caramelized ribs. Cover and cook on high for thirty minutes until the sauce is sizzling, thick, and sticky. Ensure the internal temperature of the meat reaches at least 145°F (63°C) when checked with a meat thermometer, then turn off the slow cooker and let the ribs rest for 3 minutes before serving.
