Tips for success
For the most tender lamb, always choose shoulder over leg or loin. The extra fat and connective tissue break down beautifully during slow cooking, resulting in melt-in-your-mouth meat.
If you have time, sear the lamb cubes in a hot skillet before adding them to the slow cooker—this adds a deeper flavor, though it's not shown in the video and is optional. For a thicker sauce, remove the lid for the last 30 minutes of cooking to allow excess liquid to evaporate.
This curry is incredibly forgiving. You can double the recipe as long as your slow cooker is large enough. Leftovers taste even better the next day as the flavors continue to develop.
To reheat, warm gently on the stovetop or in the microwave, adding a splash of water or coconut milk if the sauce has thickened too much. Serve with extra cilantro and a squeeze of lime for brightness, if desired.
Variations
- Beef Korma: Swap the lamb for 2 pounds of beef chuck, cut into 1-inch cubes. Cook on LOW for 8 hours or until the beef is fork-tender. The longer cooking time ensures the beef is as tender as the lamb.
- Chicken Korma: Use 2 pounds of boneless, skinless chicken thighs instead of lamb. Cook on LOW for 4 to 5 hours or until the chicken is cooked through and tender. Shred or leave in chunks.
- Vegetarian Korma: Omit the lamb and add 2 cups of chickpeas and 2 cups of diced vegetables like cauliflower or potatoes. Cook on LOW for 4 hours, or until the vegetables are tender. Add the cilantro just before serving.
- Spicier Korma: Add 1 to 2 teaspoons of garam masala and a pinch of cayenne pepper along with the korma sauce for extra heat. Adjust to taste, and serve with extra cilantro to cool the palate.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; add a little water or coconut milk when reheating to restore the desired consistency. Reheat gently on the stovetop over low heat, stirring occasionally, or in the microwave in 30-second intervals.
This recipe is perfect for make-ahead meals. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on LOW as directed.
You can also cook the curry fully, let it cool completely, and refrigerate in an airtight container for up to 4 days. Reheat gently before serving.
Serving ideas
Serve this coconut korma lamb over steamed basmati rice or with warm naan for soaking up the rich sauce. A side of cucumber raita or a simple green salad with lemon vinaigrette balances the richness. For a low-carb option, serve over cauliflower rice or with roasted vegetables. Garnish with fresh cilantro and a sprinkle of toasted coconut flakes, if desired.
This curry pairs beautifully with a variety of sides. For a traditional Indian meal, offer basmati rice, naan, and a cooling yogurt raita. For a lighter meal, serve it over quinoa or with a side of sautéed greens.
The sauce is also delicious spooned over roasted potatoes or used as a filling for wraps. Leftovers make a great lunch when reheated and served with rice.

Slow Cooker Coconut Korma Lamb Cubes: Dump-and-Go

Ingredients
- 2 lb cubed lamb shoulder
- 1 1/2 cups turmeric korma sauce
- 1 cup diced sweet onions
- 1 can (13.5 oz) coconut cream
- 1/4 cup fresh cilantro leaves
Instructions
- Place the cubed lamb shoulder in the bottom of a 6-quart slow cooker. Pour the turmeric korma sauce over the lamb, then scatter the diced sweet onions on top. Do not stir; the layers will meld during cooking.
- Pour the coconut cream evenly over the top of the sauce and onions. Sprinkle the fresh cilantro leaves over the coconut cream. Cover the slow cooker with the lid.
- Set the slow cooker to LOW and cook for 6 to 8 hours, or until the lamb is fork-tender and easily shreds. The sauce will bubble gently and thicken as the lamb releases its juices. Let it rest for 3 minutes before slicing.
- Once the lamb is tender, give the curry a gentle stir. Taste and adjust seasoning if needed. Serve hot over steamed basmati rice with warm naan on the side. Garnish with extra cilantro if desired.
