Before you start

Before you start, make sure your slow cooker is clean and dry. If using frozen crab or shrimp, thaw them overnight in the refrigerator, then pat them dry with paper towels. Slice the lemons thinly and chop the cilantro.

Melt the butter in a small saucepan or in the microwave, then stir in the chili-lime seasoning. Measure out the capers and white wine so everything is ready to assemble. Have the jasmine rice cooking or already steamed, as the seafood will be ready to serve as soon as it's done.

Ingredients at a glance (10)
  • 2 lb snow crab clusters
  • 2 lb jumbo shrimp, peeled and deveined
  • 2 Meyer lemons, thinly sliced
  • 1/4 cup capers, drained
  • 1/2 cup dry white wine
  • 1/2 cup unsalted butter, melted
  • 2 tbsp chili-lime seasoning
  • 1/2 cup fresh cilantro, chopped
  • Steamed jasmine rice, for serving
  • Lemon wedges, for serving

Instructions

Layer and Season

  1. Layer the Seafood
Place the snow crab clusters in the bottom of a 6-quart slow cooker. Add the jumbo shrimp on top, spreading them evenly. The seafood should fill the insert but not overflow.
Look for The crab and shrimp should be in a single layer if possible, with the shrimp on top.
Tip If the crab clusters are very large, break them into smaller pieces so they fit comfortably.
  2. Add Aromatics
Lay the lemon slices over the seafood, tucking a few between the crab and shrimp. Sprinkle the capers evenly over the top. Pour the white wine around the edges of the slow cooker, not directly over the seafood, to avoid washing away the seasonings.
Look for The lemon slices should cover most of the seafood, and the wine should pool at the bottom.
Tip Use a dry white wine like Sauvignon Blanc or Pinot Grigio for brightness.
  3. Make the Chili-Lime Butter
In a small bowl, stir the melted butter with the chili-lime seasoning until well combined. Pour the butter mixture evenly over the seafood and aromatics. Sprinkle the chopped cilantro over the top.
Look for The butter should coat the seafood and herbs, with the seasoning evenly distributed.
Tip If the butter solidifies while waiting, reheat it gently before pouring.

At the end of this phase, the slow cooker contains a colorful arrangement of crab and shrimp, topped with lemon slices, capers, and a sprinkle of cilantro. The butter and wine have been poured over, and the liquid is pooling at the bottom. The aromas of citrus and chili are already noticeable. Before moving on, make sure the seafood is evenly coated and the lemon slices are distributed, but do not stir.

Slow Cook to Perfection

  1. Slow Cook
Cover the slow cooker and cook on LOW for 3 to 4 hours, until the shrimp are opaque and the crab is heated through. Do not stir during cooking, as this can break up the crab clusters.
Look for The liquid should be bubbling gently around the edges, and the shrimp should be pink and curled.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Resist the urge to peek too often; each opening releases heat and extends cooking time.
  2. Check for Doneness
After 3 hours, check the shrimp by cutting into one: it should be opaque throughout with no translucent center. The crab meat should be hot and easily pulled from the shell. If not done, continue cooking for up to 1 more hour.
Look for The shrimp are done when they turn pink and curl into a loose C shape.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip For the most accurate check, use an instant-read thermometer: shrimp and crab should reach 145°F (63°C).

After 3 to 4 hours on LOW, the slow cooker is bubbling gently around the edges. The shrimp have turned pink and are slightly curled, while the crab clusters are steaming and the shells have turned a vibrant red-orange.

The sauce has thickened slightly and is glossy with butter. A fork inserted into a shrimp should meet no resistance, and the crab meat should be opaque and flaky. The kitchen smells richly of butter, garlic, and citrus.

Plate and Serve

  1. Serve Over Rice
Using a slotted spoon, transfer the seafood and aromatics to a serving platter or directly over steamed jasmine rice. Spoon some of the cooking liquid over the top. Serve with lemon wedges on the side.
Look for The seafood should be glossy with butter and the rice should be fluffy and hot.
Tip For a prettier presentation, arrange the crab clusters on top of the shrimp.

When you lift the lid, a cloud of fragrant steam rises. The seafood is bathed in a golden, buttery sauce with visible flecks of chili and cilantro. Using a slotted spoon, you transfer the crab and shrimp to a platter or over rice, leaving the excess liquid behind. The plate looks vibrant with pink shrimp, red crab shells, and bright lemon slices. A squeeze of fresh lemon adds a final burst of brightness.

Common mistakes

The most common mistake is overcooking the shrimp, which turns them tough and rubbery. Because slow cookers vary, start checking at the 3-hour mark and remember that the residual heat will continue to cook the seafood even after the slow cooker is turned off.

Another mistake is stirring the pot during cooking, which can break up the crab clusters and muddy the broth. Let the ingredients sit undisturbed. Finally, avoid using frozen seafood without thawing, as it will release excess water and dilute the sauce.

How to tell it’s done

The dish is done when the shrimp are pink, opaque, and curled into a loose C shape, and the crab meat is heated through and easily flakes from the shell. To be precise, insert an instant-read thermometer into the thickest part of a shrimp or a piece of crab meat; it should read at least 145°F (63°C).

The liquid in the slow cooker should be bubbling gently, and the butter will look glossy and slightly thickened. Do not leave the seafood on the warm setting for more than an hour, as it will continue to cook and become rubbery.

  • Shellfish: 145°F (63°C) in the thickest part
