Tips for success
For the most flavorful sauce, toast the garam masala and cumin in a dry skillet for a minute before adding to the slow cooker. This releases their essential oils and deepens their aroma.
Also, be generous with the fenugreek—it adds a unique, slightly nutty flavor that's characteristic of tikka masala. If you have time, let the marinated chicken sit in the fridge overnight for even more depth.
When stirring in the cream, do it gently and off the heat if possible to prevent curdling. The butter adds a final richness, but you can omit it for a lighter sauce.
For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it in during the last 30 minutes. This is optional but helps if you prefer a denser consistency.
Variations
- Vegetarian Paneer Tikka Masala: Replace the chicken with 1 pound of paneer, cut into cubes, and skip the yogurt marinade. Add the paneer during the last 30 minutes of cooking to avoid it breaking apart. Use the same sauce and cooking times, but reduce the cook time to 3 hours on low, since paneer doesn't need as long.
- Spicy Coconut Tikka Masala: Substitute half of the heavy cream with coconut milk for a dairy-free twist. Add a finely chopped green chili or a teaspoon of chili flakes for extra heat. The coconut milk adds a subtle sweetness that pairs well with the spices. Proceed with the same method.
- Extra Veggie Tikka Masala: Add 1 cup of diced bell peppers, 1 cup of cauliflower florets, and 1 cup of spinach during the last hour of cooking. This bulks up the dish with vegetables and adds color. The vegetables will soften and absorb the sauce. You may need to add a little extra water if the sauce seems dry.
- Creamy Cashew Tikka Masala: Instead of heavy cream, blend 1/2 cup of raw cashews with 1 cup of water until smooth, and stir that into the sauce at the end. This creates a rich, nutty creaminess that is dairy-free. The cashew cream also helps thicken the sauce. Proceed with the same method.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water or cream if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Add a splash of water or cream if the sauce is too thick.
Store leftover chicken tikka masala in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld and may even improve.
Reheat gently on the stovetop or in the microwave, adding a splash of water or cream if the sauce has thickened too much. The naan and rice are best stored separately to keep them from becoming soggy.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on LOW as directed.
This makes it a true dump-and-go meal. The marinade can also be prepared up to 2 days in advance, and the chicken can stay in the marinade for up to 24 hours.
Serving ideas
Serve the chicken tikka masala over steamed basmati rice, with warm garlic naan on the side for dipping. The naan is perfect for scooping up the rich sauce, and the rice helps balance the heat. You can also offer extra yogurt or a squeeze of lemon for brightness, though the video does not show these.
For a complete meal, add a simple cucumber salad or roasted vegetables on the side, but keep the focus on the tikka masala. The dish is hearty enough to stand alone, but a side of naan is essential for soaking up every last drop. Garnish with fresh cilantro if you like, though it's not in the original video.

Slow-Cooker Chicken Tikka Masala with Garlic Naan

Ingredients
- 2 lb boneless, skinless chicken thighs, cut into chunks
- 1 cup plain yogurt
- 2 tbsp garam masala
- 1 tbsp Kashmiri chili powder
- 1 tsp ground cumin
- 2 tbsp fresh ginger, grated
- 4 cloves garlic, minced
- 28 oz crushed San Marzano tomatoes
- 1 tbsp dried fenugreek leaves (kasuri methi)
- 1 cup heavy cream
- 2 tbsp salted butter
- Warm garlic butter naan, for serving
- Cooked basmati rice, for serving
Instructions
- In a large bowl, combine the chicken chunks with the yogurt, 1 tablespoon of garam masala, and half of the grated ginger and minced garlic. Stir well to coat every piece. Cover and refrigerate for at least 1 hour, or up to overnight, to let the yogurt tenderize the chicken.
- Add the marinated chicken and any leftover marinade to the slow cooker. Pour in the crushed San Marzano tomatoes, the remaining garam masala, Kashmiri chili powder, ground cumin, the rest of the ginger and garlic, and the dried fenugreek leaves. Stir gently to combine everything into a uniform sauce.
- Cover the slow cooker and cook on LOW for 5 hours. Do not lift the lid during cooking; the heat and steam build up to gently simmer the sauce and cook the chicken through.
- After 5 hours, uncover and stir in the heavy cream and salted butter. Continue to cook on LOW, uncovered, for 15–20 minutes, stirring occasionally, until the sauce is silky and slightly thickened.
- Spoon the chicken tikka masala over cooked basmati rice and serve with warm garlic butter naan for dipping. Tear off pieces of naan and scoop up the creamy sauce.
