Before you start

Before starting, ensure the slow cooker is positioned on a stable, heat-resistant surface near an electrical outlet. Gather all ingredients, including the frozen meatballs, green chiles, taco seasoning, red enchilada sauce, and shredded cheddar cheese.

Have a serving spoon and a clean plate ready for the final plating. There is no need to thaw the meatballs beforehand, as they cook directly from frozen.

Ensure the kitchen area is clear to allow for easy access to the slow cooker during the layering process.

Ingredients at a glance (5)
  • 1 lb frozen beef meatballs
  • 1/2 cup diced green chiles
  • 1 packet taco seasoning
  • 1 cup red enchilada sauce
  • 1 cup shredded cheddar cheese

Instructions

Layering the ingredients

  1. Combine ingredients in slow cooker
Place the frozen beef meatballs into the bottom of the slow cooker. Scatter the diced green chiles evenly over the meatballs, then sprinkle the taco seasoning packet over the top to ensure even distribution of the spices.
Look for Meatballs are arranged in a single layer if possible.
Tip Ensure the slow cooker is clean and dry before adding the frozen ingredients.

The meatballs should be arranged evenly in the slow cooker with the chiles and seasoning distributed across the top. Everything should look ready for the sauce to be poured over. Ensure the seasoning packet is spread out to avoid clumps.

Slow cooking the meatballs

  1. Add sauce and cook
Pour the red enchilada sauce over the seasoned meatballs. Cover the slow cooker with its lid and cook on low heat for 3 hours until the meatballs are thoroughly heated through and reach an internal temperature of 160°F (71°C). Let the meat rest for at least 3 minutes before proceeding.
Look for Sauce is bubbling gently and meatballs are steaming.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Avoid lifting the lid frequently to maintain a consistent temperature inside the slow cooker.

The sauce should be bubbling gently around the meatballs. The aroma of the enchilada spices should be noticeable. The meatballs should appear tender and fully coated in the thickened, flavorful red sauce before the cheese is added.

Melting the cheese and serving

  1. Add cheese and serve
Open the lid and sprinkle the shredded cheddar cheese over the hot meatballs. Replace the lid for 5 minutes or until the cheese is completely melted and bubbling, then serve immediately on a plate.
Look for Cheese is melted and gooey over the surface.
Tip Use a heat-resistant spoon to carefully plate the meatballs without breaking them.

The cheese should be completely melted and draping over the meatballs. The entire dish should be steaming hot. Check that the cheese has reached a gooey, consistent texture that binds the meatballs slightly before transferring them to the serving plate.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the sauce from coating the meatballs evenly. Ensure there is enough space for the sauce to circulate.

Another error is checking the dish too often; lifting the lid releases heat and increases the cooking time significantly. Finally, ensure the cheese is added only at the very end to prevent it from becoming oily or overcooked during the main cooking phase.

How to tell it’s done

The meatballs are finished when they are heated through and reach an internal temperature of 160°F (71°C).

The sauce should be thickened and aromatic, and the cheese should be completely melted and bubbling across the surface. Ensure the meatballs are hot in the center before serving to guarantee the best texture and safety.

  • Ground meat: 160°F (71°C) in the thickest part
  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
