Tips for success
For the most flavorful barbacoa, sear the beef cubes in a hot skillet with a little oil before adding them to the slow cooker.
This adds a deep, caramelized crust that enhances the overall taste. It's an extra step, but well worth it for special occasions.
If you prefer a thicker sauce, remove the beef and vegetables with a slotted spoon, then simmer the remaining sauce on the stovetop for a few minutes to reduce.
You can also whisk in a slurry of cornstarch and water. For a thinner sauce, add a splash of beef broth or water.
Variations
- Spicy Chipotle: Add 2-3 chipotle peppers in adobo sauce, minced, along with a teaspoon of adobo sauce, to the slow cooker with the vegetables. This adds a smoky, spicy depth that complements the beef.
- Beef and Bean: Stir in a drained can of black beans or pinto beans during the last 30 minutes of cooking. This stretches the dish and adds extra fiber and heartiness.
- Taco Style: Season the beef with a packet of taco seasoning or a homemade blend of chili powder, cumin, and smoked paprika. Serve in hard or soft taco shells with your favorite toppings.
- Low-Carb Bowl: Skip the rice and serve the barbacoa over a bed of cauliflower rice or mixed greens. Top with avocado slices and a dollop of sour cream for a satisfying low-carb meal.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Add a little beef broth or water to restore the sauce's consistency.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
Let leftovers cool completely, then keep them covered so they stay moist and full of flavor.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time since the ingredients start cold.
Serving ideas
Serve the barbacoa over fluffy cilantro-lime rice for a complete meal. The rice soaks up the creamy sauce beautifully. Alternatively, pile it into warm flour tortillas with a sprinkle of chopped cilantro and a squeeze of lime for a handheld meal.
This dish also pairs well with a simple side salad or refried beans. For a low-carb option, serve it in lettuce cups or over cauliflower rice. Leftovers can be used in quesadillas, burritos, or even as a topping for nachos.
