Tips for success

For the most flavorful results, use a good-quality salsa that you enjoy eating on its own. The salsa’s flavor concentrates as it cooks, so a vibrant, well-seasoned salsa makes a big difference. If you like extra heat, add a minced jalapeño or a dash of hot sauce when layering the ingredients.

To make the dish even more substantial, stir in a can of diced green chiles or a handful of chopped cilantro just before serving.

For a creamier sauce, you can blend a cup of the cooking liquid with an extra ounce of cream cheese and stir it back into the pot. Leftovers can be repurposed as taco filling, nacho topping, or even mixed into mac and cheese for a fun twist.

Variations

  • Spicy Chipotle Version: Add 2 chipotle peppers in adobo sauce, minced, and 1 tablespoon of adobo sauce to the slow cooker with the salsa. This adds a smoky, spicy depth that pairs beautifully with the creamy cheese.
  • Beef and Bean Burrito Bowl: Serve the barbacoa over brown rice or quinoa, and top with shredded lettuce, pico de gallo, and a dollop of sour cream. This turns the dish into a hearty burrito bowl that’s perfect for meal prep.
  • Green Salsa Variation: Replace the red salsa with 1 1/2 cups of green salsa (salsa verde). The tomatillo-based salsa adds a tangy, bright flavor that complements the beef and cheese in a different way.
  • Make It a Taco Filling: Use the barbacoa to fill warm corn tortillas, and top with shredded cabbage, diced onions, and a drizzle of crema. This is a fun, handheld way to enjoy the same flavors.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water if needed.
Freezer
Freeze the cooled barbacoa in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Add a little water or broth to loosen the sauce if it has thickened.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if the mixture has thickened. The flavors continue to develop overnight, making leftovers even more delicious.

This recipe is ideal for meal prep. Assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.

In the morning, place the insert in the slow cooker and cook as directed, adding 30 minutes to the cooking time to compensate for the cold start. Alternatively, fully cook the barbacoa, cool, and refrigerate for up to 3 days before reheating.

Serving ideas

Serve the beef barbacoa over fluffy cilantro-lime rice for a complete meal. The rice soaks up the creamy sauce, balancing the richness of the beef and cheese.

For a lighter option, serve it in lettuce cups or over a bed of greens. Warm tortillas or crusty bread also make excellent vehicles for scooping up every bit of the saucy mixture.

For a festive presentation, set out bowls of toppings like diced avocado, sliced radishes, pickled red onions, or crumbled cotija cheese.

A squeeze of fresh lime juice brightens the dish and cuts through the richness. This hearty meal is satisfying on its own, but it also pairs well with a simple side salad or grilled vegetables.

Frequently asked questions

Can this recipe be made on the stovetop or in an Instant Pot?
Yes, but the slow cooker method is preferred for the most tender results. For the stovetop, brown the beef in a Dutch oven, then add the remaining ingredients and simmer covered on low for 2 to 3 hours, or until the beef is tender. For an Instant Pot, use the manual high-pressure setting for 45 minutes, then natural release for 15 minutes before shredding.
Can this recipe be made ahead of time and reheated?
Absolutely. This dish tastes even better the next day as the flavors meld. Prepare the recipe fully, cool it, and refrigerate in an airtight container for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water to loosen the sauce if needed.
What can be used instead of cream cheese?
For a similar creamy texture, use mascarpone, crème fraîche, or a dairy-free cream cheese alternative. You can also stir in a cup of heavy cream or half-and-half at the end of cooking, but the sauce will be thinner. Greek yogurt or sour cream can be stirred in after cooking, but they may curdle if added too early.
How can the spice level be adjusted?
The heat comes primarily from the salsa. Choose a mild salsa for a family-friendly version, or use a hot salsa and add diced jalapeños or chipotle peppers for extra heat. To cool it down, serve with sour cream, avocado, or a squeeze of lime juice.
Why is the sauce sometimes watery?
A watery sauce can result from not draining the beans thoroughly or from the beef releasing excess liquid. To fix it, remove the lid during the last 30 minutes of cooking and let the sauce reduce on HIGH. Alternatively, you can thicken the sauce with a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water, stirred in and cooked for 10 minutes.

Slow cooker beef barbacoa with black beans, corn, and melted cheese sauce

Ingredients

  • 2 1/2 lb beef chuck, cut into 2-inch cubes
  • 2 cans (15 oz each) black beans, rinsed and drained
  • 1 1/2 cups frozen fire-roasted corn kernels
  • 1 1/2 cups chunky roasted red tomato salsa
  • 8 oz cream cheese, softened and cut into pieces
  • 2 cups shredded sharp cheddar cheese
  • cilantro-lime rice, cooked, for serving

Instructions

  1. Place the beef chuck cubes in the bottom of a 6-quart slow cooker. Scatter the rinsed black beans, fire-roasted corn, and chunky roasted red tomato salsa evenly over the beef. Do not stir.
  2. Place the cream cheese pieces in the center of the mixture, then sprinkle the shredded sharp cheddar over the top. Cover the slow cooker with the lid.
  3. Cook on LOW for 8 hours or on HIGH for 4 to 5 hours, until the beef is fork-tender and shreds easily. Do not open the lid during cooking unless checking for doneness. Let it rest for 3 minutes before slicing.
  4. Turn off the slow cooker. Using two forks, shred the beef directly in the pot, mixing it with the beans, corn, and creamy sauce. Let the mixture rest for at least 3 minutes before serving.
  5. Spoon the warm cilantro-lime rice onto plates or into bowls, then top with a generous scoop of the beef barbacoa mixture. Serve immediately.
