Tips for success
For the deepest flavor, use a good-quality molasses garlic BBQ sauce that is thick and dark. If the sauce is too thin, it will not cling to the ribs as well.
If you prefer a thicker glaze, after cooking, transfer the sauce to a saucepan and simmer on the stove until reduced. You can also mix a tablespoon of cornstarch with water and stir it into the sauce during the last 30 minutes of cooking.
To make this recipe even easier, prep the rub and slice the onion the night before. Store them in separate containers in the fridge.
In the morning, just add the ribs to the slow cooker, sprinkle with the rub, top with onions, and pour over the sauce. This makes the recipe a true 5-minute prep on busy mornings.
Variations
- Spicy Chipotle Ribs: Add 1 to 2 chipotle peppers in adobo sauce, minced, along with the BBQ sauce for a smoky heat. Reduce the brown sugar to 2 tablespoons to balance the spice. Serve with a cooling crema or sour cream.
- Honey Garlic Ribs: Replace the molasses garlic BBQ sauce with 1 cup of honey garlic sauce and add 2 tablespoons of honey. Omit the smoked paprika and use 1 teaspoon garlic powder instead. Cook as directed.
- Root Beer Ribs: Substitute 1 cup of root beer for 1 cup of the BBQ sauce, and add 1 tablespoon of Worcestershire sauce. The root beer adds a subtle sweetness and helps tenderize the meat. Cook as directed.
- Smoky Bourbon Ribs: Add 2 tablespoons of bourbon and 1 teaspoon of liquid smoke to the sauce mixture. Reduce the brown sugar to 3 tablespoons. The bourbon adds depth and a slight oakiness that pairs well with the molasses.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. The sauce will thicken; add a splash of water or broth when reheating.
- Freezer
- Freeze the cooled ribs in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating gently.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling. Add a splash of water or broth if the sauce is too thick.
Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently in the microwave or on the stovetop, adding a splash of water or broth to loosen if needed. The flavors continue to meld overnight, making leftovers even more delicious.
This recipe is perfect for making ahead. Cook the ribs as directed, then let them cool completely in the sauce. Transfer to an airtight container and refrigerate for up to 3 days.
To serve, reheat gently on the stovetop or in the slow cooker on LOW until warmed through. The ribs can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the ribs hot, straight from the slow cooker, with plenty of the caramelized onions and sauce spooned over the top. They pair beautifully with classic sides like coleslaw, cornbread, or mashed potatoes. The sweet and smoky flavors also work well with pickled vegetables to cut through the richness.
For a casual meal, pile the ribs onto soft buns with a little extra sauce for sandwiches. They also make a great topping for baked potatoes or nachos.
If serving a crowd, keep the ribs warm in the slow cooker on the WARM setting and let guests serve themselves. Garnish with fresh herbs like parsley or chives if desired.

Slow-Cooker Brown Sugar Molasses Country Pork Ribs

Ingredients
- 2 lb boneless country-style pork ribs
- 1/4 cup dark brown sugar, packed
- 2 tsp smoked paprika
- 1 yellow onion, thinly sliced
- 1 1/2 cups molasses garlic BBQ sauce
Instructions
- Place the boneless country-style pork ribs in the bottom of a 6- to 7-quart slow cooker. Sprinkle the dark brown sugar and smoked paprika evenly over the ribs, turning to coat all sides. Scatter the sliced yellow onion on top of the ribs.
- Pour the molasses garlic BBQ sauce over the ribs and onions. Use a spoon or tongs to gently toss everything until the ribs are fully coated in the sauce.
- Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the pork is fork-tender and easily pulls apart. The internal temperature of the thickest piece should reach at least 145°F (63°C) for safety, but for fall-apart tenderness, cook until it reaches 200°F (93°C). Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Let the ribs rest in the sauce for 10 minutes. Using tongs or a fork, transfer the ribs to a serving platter, spooning some of the caramelized onions and sauce over the top.
