Tips for success

For a deeper color and more intense flavor, you can sear the pork loin in a hot skillet with a small amount of oil before placing it in the slow cooker. This step is optional but adds an extra layer of complexity to the crust. If you choose to sear, ensure the pan is very hot so the exterior browns quickly without cooking the interior of the meat, keeping the total cook time consistent.

If you prefer a thicker sauce, you can carefully remove the cooked apples and onions after the pork is done and transfer the remaining liquid to a small saucepan. Simmer the liquid over medium-high heat for several minutes until it reduces to your desired consistency.

This creates a concentrated glaze that can be drizzled over the pork slices, enhancing the flavor of the mustard and brown sugar even further for a polished presentation.

Variations

  • Savory Herb Infusion: Add two sprigs of fresh rosemary or thyme to the slow cooker along with the pork. The woodsy herbs provide a fragrant, earthy contrast to the sweetness of the brown sugar and apples.
  • Spicy Mustard Kick: Incorporate a teaspoon of crushed red pepper flakes or a tablespoon of spicy brown mustard into the rub. This variation introduces a subtle heat that cuts through the richness of the pork.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days in the refrigerator.
Freezer
Freeze the cooked pork and apples in a freezer-safe container for up to 2 months.
Reheat
Reheat gently in a covered skillet over low heat with a splash of water or broth to maintain moisture.

Allow any leftovers to cool completely at room temperature, but for no longer than two hours, before transferring them to an airtight container. Keep the pork and the apple mixture in the refrigerator to maintain freshness. Proper storage ensures the meat remains safe to eat and retains its moisture, preventing it from drying out over the next few days in the cold environment of the fridge.

This dish is an excellent candidate for making ahead, as the flavors often meld and improve after sitting in the refrigerator overnight. You can prepare the entire dish, let it cool, and reheat it when ready to serve.

Alternatively, you can prepare the apple and onion bed and the mustard-sugar rub in advance, keeping them stored separately until you are ready to assemble and start the slow cooker for the final cooking process.

Serving ideas

Serve the sliced pork loin on a warmed platter to maintain the temperature of the meat. Arrange the tender, cinnamon-baked apples alongside the pork, spooning the rich, reduced pan juices generously over everything.

This presentation highlights the contrast between the savory, crusted meat and the sweet, softened fruit, creating a balanced and visually appealing meal that is perfect for a cozy family dinner or a relaxed weekend gathering.

Consider pairing this dish with simple sides that complement the sweet and tangy profile of the pork. Roasted root vegetables, creamy mashed potatoes, or a light green salad with a bright vinaigrette work exceptionally well to round out the meal.

The goal is to keep the side dishes relatively neutral so that the complex, caramelized flavors of the pork and apple roast remain the star of the show during your dining experience.

Frequently asked questions

Can a pork tenderloin be used instead of a pork loin?
A pork tenderloin is not recommended for this recipe because it is a much smaller, leaner cut that will become dry and tough if cooked for 5.5 hours in a slow cooker. The pork loin is a larger, more durable cut better suited for long, slow cooking.
How can the sauce be thickened if it is too thin?
If the sauce is too thin, transfer the liquid to a saucepan and simmer it over medium-high heat until it reduces to the desired consistency. Alternatively, whisk in a small amount of cornstarch slurry and cook until thickened.
Is it necessary to peel the apples?
Peeling the apples is a matter of personal preference. Leaving the skins on provides a bit of texture and helps the apple pieces hold their shape during the long cooking process, but they can be peeled if a smoother sauce is desired.
