Tips for success

For the most flavorful results, let the cooked brisket rest in the gravy for 10 to 15 minutes after shredding. This allows the meat to absorb even more sauce.

If you have time, refrigerate the shredded brisket overnight—the flavors will meld and deepen, making it even better the next day.

If you prefer a thicker gravy, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.

Let it simmer until thickened. For a thinner sauce, add a splash of beef broth or water to reach your desired consistency.

Variations

  • Smoky Brisket: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of liquid smoke to the gravy before pouring over the meat. This gives the brisket a subtle barbecue flavor without a smoker.
  • Spicy Kick: Add 1-2 minced chipotle peppers in adobo sauce to the gravy for a smoky heat. Or sprinkle in 1/2 teaspoon of cayenne pepper along with the herbs.
  • Mushroom Gravy: Sauté 8 ounces of sliced cremini mushrooms in butter until browned, then add them to the slow cooker with the brisket. This adds an earthy depth to the gravy.
  • Red Wine Braise: Replace 1/2 cup of the gravy with 1/2 cup of dry red wine. The wine adds complexity and a rich color to the sauce. Cook as directed—the alcohol will cook off.

Storage and make-ahead

Fridge
Store leftover brisket in an airtight container in the refrigerator for up to 4 days.
Freezer
Freeze the shredded brisket and gravy in a freezer-safe container for up to 3 months.
Reheat
Reheat the brisket gently on the stovetop over low heat, adding a splash of beef broth to loosen the gravy.

Leftover brisket and gravy can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if needed to loosen the sauce. The flavor actually improves after a day in the fridge.

This recipe is perfect for making ahead. You can assemble everything in the slow cooker insert the night before, cover, and refrigerate.

In the morning, simply place the insert in the slow cooker and cook as directed. Alternatively, you can cook the brisket a day ahead, shred it, and refrigerate it in the gravy. Reheat gently before serving.

Serving ideas

Serve the shredded brisket on toasted brioche slider buns for a crowd-pleasing meal. Pile the meat high and spoon extra gravy over the top.

Add a side of coleslaw, pickles, or a simple green salad to cut through the richness. These sliders are perfect for game day, parties, or a casual family dinner.

This brisket is also delicious served over mashed potatoes, egg noodles, or polenta. The gravy acts as a sauce, so you can skip the buns entirely and make it a hearty plated dish. Garnish with a sprinkle of fresh chopped parsley for a pop of color and freshness.

Frequently asked questions

Can this brisket be made in a Dutch oven instead of a slow cooker?
Yes. Sear the brisket in a Dutch oven, then add the remaining ingredients. Cover and braise in a 300°F oven for 3 to 4 hours, until tender. Check occasionally and add a little beef broth if needed.
What is the best cut of beef for this recipe?
Beef brisket is ideal because of its fat content and connective tissue, which break down during long cooking. Chuck roast is a good substitute and will also become tender and shreddable.
Can the brisket be overcooked?
Yes, if cooked too long, the meat can become dry and stringy. Stick to 8-10 hours on low. To check, insert a fork—it should twist easily and the meat should shred without resistance.
Can this recipe be doubled?
If your slow cooker is large enough (at least 8 quarts), you can double the ingredients. Keep the cooking time the same, but make sure the meat is submerged in the gravy for even cooking.
How can the gravy be thickened?
Mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the slow cooker during the last 30 minutes of cooking. Let it simmer until the gravy thickens to your liking.

Slow-Cooker Brown Gravy Beef Brisket

Shredded beef brisket with gravy on a toasted brioche slider bun

Ingredients

  • 3 1/2 lb beef brisket, trimmed
  • 12 cloves garlic, smashed
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 2 cups brown gravy (beef bone broth based)
  • 4 tbsp unsalted butter, cut into pats
  • 8 toasted brioche slider buns

Instructions

  1. Place the trimmed beef brisket flat in the bottom of a 7-quart slow cooker. It should fit snugly; if necessary, trim to fit but keep the roast intact.
  2. Scatter the smashed garlic cloves and the fresh rosemary and thyme sprigs evenly over the top of the raw brisket.
  3. Pour the brown gravy over the brisket and herbs. Dot the top with the butter pats.
  4. Cover the slow cooker and cook on LOW for 8 to 10 hours, until the brisket is fork-tender and easily shreds. Let it rest for 3 minutes before slicing.
  5. Carefully transfer the brisket to a cutting board. Using two forks, shred the meat into bite-size pieces, discarding any large fat pieces. Return the shredded meat to the slow cooker and stir to coat with the gravy.
  6. Toast the brioche slider buns until golden and warm.
  7. Pile the shredded brisket onto the toasted buns and spoon extra gravy over the top. Serve immediately.
