Tips for success

To add a touch of richness, you can stir in a small knob of butter right before serving. The fat helps to emulsify the remaining cooking liquid, creating a slightly velvety coating for the celeriac. If you want a bit of acidity to brighten the dish, a tiny splash of lemon juice or white wine vinegar added at the very end can balance the earthy sweetness of the root vegetable.

If you find that the liquid is too thin after the cooking time is complete, you can remove the lid and set the slow cooker to high for an additional fifteen minutes to reduce the broth.

Alternatively, you can remove the celeriac with a slotted spoon and boil the liquid on the stovetop until it reaches your desired consistency, then pour it back over the vegetables before serving.

Variations

  • Creamy Braised Celeriac: Stir in two tablespoons of heavy cream or crème fraîche during the last thirty minutes of cooking for a richer, more luxurious sauce.
  • Garlic and Herb Celeriac: Add two cloves of thinly sliced garlic along with the shallots for a more pungent, aromatic profile that complements the earthy celeriac.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Freezing is not recommended as it changes the texture of the celeriac significantly.
Reheat
Reheat gently on the stovetop over low heat or in the microwave until warmed through.

Allow any leftovers to cool completely at room temperature, but do not leave them out for more than two hours. Once cooled, transfer the celeriac and its cooking liquid into an airtight container.

Properly sealed, the dish will retain its flavor and texture in the refrigerator for up to three days. Ensure the container is stored on an interior shelf of the fridge to maintain a consistent, cold temperature.

This dish is an excellent candidate for making ahead, as the flavors often deepen after sitting for a day. You can prepare the entire dish, let it cool, and store it in the refrigerator. When you are ready to serve, gently reheat it on the stovetop or in the microwave. It is a convenient option for busy weeks when you want a home-cooked side dish ready to go with minimal effort.

Serving ideas

Serve this braised celeriac warm, perhaps in a shallow bowl that can hold a bit of the flavorful cooking liquid. It makes a sophisticated accompaniment to roasted chicken, pork chops, or even a simple pan-seared white fish.

Because the flavor is relatively subtle, it pairs well with both rustic, hearty main courses and lighter, more delicate proteins, making it a versatile addition to your repertoire.

For a more polished presentation, you can garnish the dish with a sprinkle of fresh, finely chopped parsley or a few reserved thyme leaves. The vibrant green color provides a beautiful contrast to the pale, tender celeriac.

If you prefer a bit of texture, a small handful of toasted nuts, such as hazelnuts or walnuts, added just before serving can provide a satisfying crunch that complements the softness of the braised vegetables.

Frequently asked questions

Can other root vegetables be added to this recipe?
Yes, you can substitute a portion of the celeriac with cubed parsnips or potatoes. Keep in mind that these vegetables may have different cooking times, so ensure they are cut into sizes that will cook at the same rate as the celeriac.
Why is it important to peel the celeriac thoroughly?
The outer skin of celeriac is thick, tough, and often covered in dirt. It does not soften during the cooking process and will remain unpleasantly chewy if left on. Removing it ensures a smooth, tender texture throughout the dish.
Can this be made without a slow cooker?
Yes, you can braise the ingredients in a heavy-bottomed pot or Dutch oven on the stovetop. Use low heat and keep the pot covered, checking occasionally to ensure there is enough liquid and that the vegetables are not scorching on the bottom.

Ingredients

  • 1 large celeriac, peeled and diced
  • 3 shallots, thinly sliced
  • 4 sprigs fresh thyme
  • 1 cup vegetable broth

Instructions

  1. Peel the celeriac thoroughly to remove the tough, gnarled outer skin, then dice the flesh into uniform one-inch cubes. Place the diced celeriac into the bottom of the slow cooker basin. Scatter the thinly sliced shallots evenly over the top of the celeriac pieces. Add the fresh thyme sprigs on top of the shallots to infuse the dish with herbal notes.
  2. Pour the vegetable broth over the vegetables and thyme in the slow cooker. Cover the slow cooker with its lid. Set the device to the low setting and cook for four hours. The slow cooker will gently braise the celeriac in the broth until it becomes tender enough to pierce easily with a fork.
  3. Once the cooking time is complete, carefully remove the lid and check the tenderness of the celeriac with a fork. If it is soft, transfer the braised celeriac and some of the flavorful cooking liquid to a serving plate. Serve warm as a comforting side dish alongside your main course.
