Tips for success

For the best texture, use a good-quality corn tortilla that is soft and pliable. If your tortillas are stale, wrap them in a damp paper towel and microwave for 30 seconds to soften.

This makes them easier to layer and prevents cracking. You can also toast them lightly in a dry skillet for extra flavor before adding to the slow cooker.

If you prefer a spicier dish, use a hot enchilada sauce or add a minced chipotle pepper in adobo sauce to the sauce before layering. For a smoky twist, sprinkle a little smoked paprika over each layer.

To make it more substantial, you could add cooked shredded chicken or ground beef, but this vegetarian version is satisfying on its own.

Variations

  • Add a Protein: For a non-vegetarian version, add 1 1/2 cups of cooked shredded chicken or seasoned ground beef to the bean layer. Cook the meat thoroughly before adding, and adjust the seasoning to complement the smoky sauce.
  • Spicy Kick: Add 1-2 minced chipotle peppers in adobo sauce to the enchilada sauce for extra heat. Or use a hot enchilada sauce and top with pickled jalapeños before serving.
  • Cheese Swap: Replace the Chihuahua cheese with a blend of Monterey Jack and sharp cheddar for a different flavor profile. You can also use pepper jack for a spicy kick.
  • Green Enchilada Sauce: Substitute green enchilada sauce for the red chipotle sauce. The flavor will be milder and tangier, and the dish will have a green hue. Adjust the cooking time as needed.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop until hot.
Freezer
Freeze cooled portions in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat thawed or refrigerated portions in the microwave for 2-3 minutes, or in a 350°F (175°C) oven for 15-20 minutes, until hot.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The stack will become more saucy as it sits, which is fine.

Reheat individual portions in the microwave or in a covered skillet over medium heat until hot. The texture of the tortillas will be softer than when freshly made, but the flavor remains excellent.

You can assemble the entire stack (without the toppings) up to 24 hours in advance. Cover and refrigerate, then add about 30 minutes to the cooking time when ready to cook. Alternatively, cook the stack fully, let it cool, and refrigerate for up to 4 days. Reheat in a 350°F (175°C) oven until hot, about 20 minutes.

Serving ideas

Serve the enchilada stack as a main course with a side of Mexican rice, refried beans, or a simple green salad. It's also delicious with sour cream or a dollop of guacamole.

For a casual dinner, let guests serve themselves directly from the slow cooker. The stack is filling enough to be a complete meal, but the toppings add a fresh contrast.

For a festive presentation, transfer the stack to a large platter and sprinkle with extra cilantro and a squeeze of lime juice. You can also add pickled jalapeños or a drizzle of crema. Leftovers make a great lunch—just reheat and enjoy. The recipe is easily doubled for a crowd if you have a larger slow cooker.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, you can assemble the uncooked stack up to 24 hours in advance and refrigerate it. When ready to cook, add about 30 minutes to the cooking time. Alternatively, cook the stack fully, let it cool, and refrigerate for up to 4 days. Reheat in the oven or microwave.
Can this be frozen?
Yes, cooked portions freeze well for up to 3 months. Place them in a freezer-safe container, label with the date, and thaw overnight in the refrigerator before reheating. The texture of the tortillas will be softer but still delicious.
What can be used instead of Chihuahua cheese?
Monterey Jack, mild cheddar, or a Mexican cheese blend are good substitutes. They melt well and have a similar mild flavor. For a sharper taste, use a combination of cheddar and Monterey Jack.
How spicy is this dish?
The heat level depends on the enchilada sauce you use. Chipotle red sauce has a moderate smoky heat. For a milder version, use a mild red sauce or a green enchilada sauce. To make it spicier, add minced chipotle peppers or use hot sauce.
Can this be made without a slow cooker?
Yes, you can assemble the layers in a 9x13-inch baking dish and bake at 350°F (175°C) for 25-30 minutes, until hot and bubbly. Cover with foil for the first 20 minutes to prevent the top from over-browning.

Slow-Cooker Black Bean & Corn Enchilada Stack

Prep 15 minCook 3 hTotal 3 h 15 minServes 6
A steaming square portion of the black bean and corn enchilada stack on a matte slate plate, garnished with fresh cilantro.

Ingredients

  • 2 cans (15 oz each) black beans, rinsed and drained
  • 2 cups fire-roasted sweet corn (fresh, frozen, or canned)
  • 20 oz smoky chipotle red enchilada sauce
  • 12 yellow corn tortillas (6-inch)
  • 2 cups shredded Chihuahua cheese (or Monterey Jack)
  • 1/2 cup crumbled queso fresco
  • 2 roma tomatoes, diced
  • 1/4 cup sliced black olives
  • 1/4 cup fresh cilantro sprigs

Instructions

  1. Spray the inside of a 6-quart slow cooker with nonstick spray. Spread about 1/2 cup of the enchilada sauce over the bottom. Layer one-third of the black beans, one-third of the corn, and 4 tortillas (tear to fit if needed). Drizzle with one-third of the remaining sauce and sprinkle with one-third of the shredded Chihuahua cheese.
  2. Repeat the layering twice more: beans, corn, tortillas, sauce, and cheese. Finish with a final layer of tortillas and sauce, then top with the remaining cheese. Press down gently with a spatula to compact the stack.
  3. Cover the slow cooker and cook on HIGH for 3 hours, without opening the lid during the first 2 hours. The tortillas will absorb the sauce and soften, while the cheese melts into a gooey canopy. After 3 hours, check that the cheese is fully melted and the edges are bubbly.
  4. Turn off the slow cooker and let the stack rest for 10 minutes. Using a spatula, cut into 6 squares and carefully lift each portion onto a plate. Top each serving with crumbled queso fresco, diced roma tomatoes, sliced black olives, and fresh cilantro sprigs.
