Tips for success

For a deeper flavor, you can sear the veal chunks in a hot pan with a little oil before placing them in the slow cooker. While not strictly necessary, this extra step adds a layer of complexity to the meat and contributes to a richer, darker sauce. If you choose to sear, do it in batches to avoid crowding the pan, which would cause the meat to steam rather than brown.

If you find the sauce is not as thick as you prefer, you can carefully remove the meat and vegetables and simmer the remaining liquid in a saucepan over medium heat until it reduces to your desired consistency.

This simple adjustment ensures the final result is perfectly balanced. Always taste your sauce before serving to determine if a final pinch of salt or pepper is needed to brighten the flavors.

Variations

  • Herb-Infused Veal: Add a sprig of fresh thyme or rosemary to the slow cooker during the braising phase to introduce a subtle, aromatic herbal note that pairs beautifully with the veal and beer.
  • Mushroom Medley: Incorporate a cup of sliced cremini or button mushrooms during the final hour of cooking. They add an earthy flavor and a meaty texture that complements the tender veal chunks perfectly.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Freeze in a freezer-safe container for up to 2 months.
Reheat
Reheat gently on the stovetop over low heat until simmering.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Ensure the stew has cooled to room temperature within 2 hours after cooking before placing it in the fridge.

When storing, keep the meat submerged in the sauce to prevent it from drying out, which also helps maintain the flavor for subsequent meals. Label the container with the date so you can keep track of its freshness easily.

This dish is an excellent candidate for making ahead, as the flavors often meld and improve after resting in the refrigerator overnight. Prepare the stew as directed, allow it to cool completely, and store it in the refrigerator. When ready to serve, gently reheat the stew on the stovetop over low heat, adding a splash of water or stock if the sauce has become too thick during storage.

Serving ideas

Serve this braised veal hot, ideally in wide, shallow bowls that can accommodate the generous amount of savory sauce. A side of creamy mashed potatoes, steamed root vegetables, or a simple buttered egg noodle dish provides the perfect base to soak up the beer-infused gravy.

The richness of the veal pairs beautifully with the earthy tones of the carrots and onions, creating a satisfying and complete meal.

For a touch of freshness, garnish each serving with a sprinkle of freshly chopped parsley or chives. The bright, herbal notes contrast nicely with the deep, savory profile of the braised meat.

Crusty bread is a must-have for the table, as it allows guests to enjoy every last drop of the flavorful sauce. Keep the servings balanced, ensuring each plate receives an equal portion of the tender veal and the cooked vegetables.

Frequently asked questions

Can this be made with a different type of meat?
While veal is specifically highlighted, this recipe works very well with beef chuck or pork shoulder. These cuts have similar connective tissue that breaks down beautifully during the slow cooking process, resulting in a tender and flavorful final dish.
Does the alcohol in the beer remain in the dish?
The majority of the alcohol evaporates during the long, low-temperature cooking process in the slow cooker. What remains is the complex, malty flavor of the beer, which adds significant depth to the sauce without providing a strong alcoholic taste.
Is it possible to overcook the veal in the slow cooker?
Yes, although the slow cooker is forgiving, cooking the veal for significantly longer than the recommended time can lead to the meat becoming overly soft and beginning to break apart. Stick to the suggested cooking time to ensure the best texture for both the meat and the vegetables.
