Tips for success

For a deeper flavor, you can sear the beef shanks in a hot skillet with a small amount of oil before placing them in the slow cooker. While not strictly necessary, this Maillard reaction adds a complex, roasted dimension to the final stew.

Ensure the pan is very hot to achieve a nice brown crust on the meat, then deglaze the pan with a little of the red wine to capture all those flavorful browned bits before pouring everything into the cooker.

Consider serving this dish over a bed of creamy polenta or mashed potatoes to soak up the luxurious red wine sauce. If you prefer a lighter accompaniment, crusty bread is excellent for dipping.

The purple carrots add a beautiful color contrast, so try to keep them in larger chunks if you want them to remain distinct on the plate. Remember that fresh herbs like thyme can be added right at the end for a fresh pop of color and aroma if desired.

Variations

  • Root Vegetable Medley: Replace the purple carrots with a mixture of parsnips, turnips, and golden beets. These root vegetables bring a different sweetness and texture that pairs beautifully with the savory beef and red wine base, offering a more rustic feel to the finished stew.
  • Herbed Red Wine Reduction: Add a tablespoon of tomato paste and a bay leaf to the slow cooker at the beginning. The tomato paste adds body and tang, while the bay leaf introduces a subtle, earthy aroma that complements the thyme and wine perfectly.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Freeze in a freezer-safe container for up to 2 months.
Reheat
Reheat gently on the stovetop over low heat until steaming hot throughout.

Store any leftover beef shank and vegetables in an airtight container in the refrigerator for up to three days. When storing, ensure the meat is submerged in its cooking liquid, which helps prevent it from drying out.

If you have a large amount of leftover sauce, you can freeze it separately to use as a base for future soups or gravies. Always allow the food to cool to room temperature for no more than two hours before placing it into the refrigerator.

This stew is an excellent candidate for making ahead, as the flavors often improve after sitting in the refrigerator overnight. Simply prepare the recipe as directed, allow it to cool, and store it.

When ready to serve, gently reheat the stew on the stovetop over low heat or in the slow cooker until it is warmed through. This method allows the beef to further tenderize and the sauce to thicken slightly, making it even more delicious upon reheating.

Serving ideas

When serving, place a generous portion of the tender beef shank in the center of a warm plate, surrounded by the purple carrots and onions. Drizzle a few spoonfuls of the reduced cooking liquid over the top to add shine and moisture. A garnish of fresh thyme leaves can be added for a professional touch that brightens the presentation of the dark, savory stew.

The meal is best enjoyed when the temperature is warm and comforting. Because the beef is so tender, it can be served as a whole piece or shredded directly onto the plate. Pair the dish with a side of steamed greens or a crisp salad to balance the richness of the beef and the depth of the wine-based sauce, creating a complete and satisfying dining experience.

Frequently asked questions

Can this dish be made ahead of time?
Yes, this stew is ideal for making ahead. The flavors continue to develop and meld in the refrigerator, often making the dish even better the next day. Simply store it in an airtight container and reheat gently on the stovetop until it reaches a safe serving temperature.
Why is the beef still tough after cooking?
If the beef remains tough, it likely needs more time to cook. Connective tissue in beef shank requires a slow breakdown process. Ensure your slow cooker is set to low and allow it to cook for the full duration. If it still feels firm, continue cooking in 30-minute increments until the meat is fork-tender.
What is a good substitute for red wine?
If you prefer not to use alcohol, you can substitute the red wine with an equal amount of beef broth mixed with a tablespoon of balsamic vinegar or red wine vinegar. This provides the necessary acidity and depth to balance the richness of the beef without using wine.
