Tips for success
For the most flavorful results, use a good-quality brown gravy—whether canned or homemade. If you have time, make a quick gravy by whisking 2 cups of beef broth with 2 tablespoons of cornstarch and a splash of Worcestershire sauce.
The onion soup mix adds plenty of salt, so taste the gravy before adding extra salt. If the sauce seems thin at the end, simmer it on high for 10 minutes to reduce.
To serve, pile the brisket onto toasted brioche slider buns and spoon extra gravy over the top. The meat also shines over egg noodles, mashed potatoes, or creamy polenta.
Leftovers are even better the next day—store them in the fridge and reheat gently on the stovetop or in the microwave. For a crowd, set up a toppings bar with pickles, sliced onions, and horseradish sauce.
Variations
- Smoky Chipotle Brisket: Add 2 chipotle peppers in adobo sauce, minced, and 1 teaspoon smoked paprika to the gravy before pouring over the brisket. The smoky heat pairs beautifully with the beef and mushrooms.
- Herb and Garlic Brisket: Sprinkle 2 teaspoons dried thyme, 1 teaspoon dried rosemary, and 4 minced garlic cloves over the brisket along with the onion soup mix. Finish with a splash of red wine vinegar for brightness.
- Balsamic Glazed Brisket: Replace 1/2 cup of the gravy with balsamic vinegar and add 2 tablespoons brown sugar. The vinegar adds tang and the sugar helps caramelize the edges of the meat.
- Beer-Braised Brisket: Substitute 1 cup of the gravy with a dark beer, such as stout or porter. The beer adds depth and a slight bitterness that complements the rich beef.
Storage and make-ahead
- Fridge
- Store leftover brisket in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the cooked brisket in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat the brisket in a covered pot over low heat, stirring occasionally, until heated through. Add a splash of beef broth or water if the gravy has thickened.
Cool any leftovers to room temperature within 2 hours, then transfer to an airtight container. Refrigerate for up to 4 days.
The brisket can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating. Reheat gently in a covered pot over low heat, adding a splash of beef broth if needed to loosen the gravy.
This recipe is perfect for meal prep. Cook the brisket up to 2 days ahead, shred it, and store it in the gravy in the refrigerator. Reheat gently on the stovetop or in the slow cooker on warm. The flavors deepen as it sits, making it even more delicious the next day.
Serving ideas
Serve the brisket hot, spooned over mashed potatoes or buttered egg noodles, with plenty of gravy and mushrooms. A side of roasted green beans or a crisp green salad balances the richness.
For a casual meal, pile the meat onto toasted slider buns and top with a spoonful of gravy—perfect for game day or a family dinner.
For a more formal presentation, arrange the shredded brisket on a platter and garnish with fresh parsley. Offer extra gravy in a gravy boat, and let everyone help themselves. The brisket pairs well with a full-bodied red wine, such as a Zinfandel or Syrah, which complements the deep beefy flavors.

Slow-Cooker Beef Brisket with Mushroom Gravy

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 2 cups rich brown gravy (canned or homemade)
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Sprinkle the dry onion soup mix evenly over the top of the brisket. Scatter the halved cremini mushrooms around the sides of the meat.
- Pour the rich brown gravy over the brisket and mushrooms. Dot the top of the meat with the pats of unsalted butter. Do not stir—just let the layers sit as they are.
- Cover the slow cooker and cook on low heat for 8 to 10 hours, until the brisket is fork-tender and easily shreds. Do not open the lid during cooking to keep the heat and moisture steady. Let it rest for 3 minutes before slicing.
- Once the brisket is fork-tender, transfer it to a cutting board. Let it rest for at least 3 minutes. Using two forks, shred the meat into bite-sized pieces, discarding any large fat pieces.
- Return the shredded brisket to the slow cooker with the gravy and mushrooms. Stir gently to combine. Let it sit on warm for 10 minutes so the meat soaks up the gravy. Let it rest for 3 minutes before slicing.
- Spoon the brisket and gravy onto a platter or serve directly from the slow cooker. For sandwiches, pile the meat onto toasted brioche slider buns and spoon extra gravy over the top.
