Before you start

Before starting, trim the brisket of excess fat, leaving a thin layer. Halve the cremini mushrooms if they are large. Measure out the gravy and cut the butter into small pats.

Have your slow cooker ready—a 6-quart model is ideal for this amount. There is no need to sear the brisket; the slow cooker does all the work. If you plan to serve the brisket on buns, toast them just before serving.

Ingredients at a glance (5)
  • 3 1/2 lb beef brisket, trimmed
  • 1 oz dry onion soup mix
  • 8 oz cremini mushrooms, halved
  • 2 cups rich brown gravy (canned or homemade)
  • 4 tbsp unsalted butter, cut into pats

Instructions

Build the Base

  1. Layer the Brisket
Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Sprinkle the dry onion soup mix evenly over the top of the brisket. Scatter the halved cremini mushrooms around the sides of the meat.
Look for The brisket should sit snugly in the slow cooker, with the mushrooms tucked around it.
Tip Trim excess fat from the brisket, but leave a thin layer for moisture.
  2. Add Gravy and Butter
Pour the rich brown gravy over the brisket and mushrooms. Dot the top of the meat with the pats of unsalted butter. Do not stir—just let the layers sit as they are.
Look for The gravy should cover the bottom of the slow cooker and come about halfway up the brisket.
Tip The butter adds richness and helps tenderize the meat as it melts.

At the end of this phase, the brisket sits flat in the slow cooker, covered with onion soup mix and surrounded by mushrooms.

The gravy and butter are added, and the slow cooker is ready to go. The raw brisket should look well seasoned, and the mushrooms should be nestled around it, ready to soak up the flavors.

Slow-Cook and Shred

  1. Slow-Cook on Low
Cover the slow cooker and cook on low heat for 8 to 10 hours, until the brisket is fork-tender and easily shreds. Do not open the lid during cooking to keep the heat and moisture steady. Let it rest for 3 minutes before slicing.
Look for After 8 hours, the meat should be pull-apart tender and the gravy bubbling gently.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Low heat is essential for breaking down the collagen in brisket.
  2. Shred the Brisket
Once the brisket is fork-tender, transfer it to a cutting board. Let it rest for at least 3 minutes. Using two forks, shred the meat into bite-sized pieces, discarding any large fat pieces.
Look for The meat should shred easily with no resistance.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Resting the meat before shredding keeps it juicy.

After 8 to 10 hours on low, the brisket is fork-tender and the gravy is bubbling. The meat should shred easily with no resistance, and the mushrooms should be soft and savory. The kitchen will smell rich and beefy, and the gravy will have darkened to a deep brown.

Finish and Serve

  1. Return to Gravy
Return the shredded brisket to the slow cooker with the gravy and mushrooms. Stir gently to combine. Let it sit on warm for 10 minutes so the meat soaks up the gravy. Let it rest for 3 minutes before slicing.
Look for The brisket should be coated in glossy gravy and the mushrooms tender.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the gravy seems thin, simmer on high for 10 minutes to reduce.
  2. Serve
Spoon the brisket and gravy onto a platter or serve directly from the slow cooker. For sandwiches, pile the meat onto toasted brioche slider buns and spoon extra gravy over the top.
Look for The meat should be moist and glistening, with mushrooms and gravy spooned over.
Tip Serve with pickles or a crisp salad to cut the richness.

The shredded brisket is returned to the gravy and allowed to warm through. The final dish should be moist and glossy, with tender shreds of beef coated in savory gravy. Spoon it over mashed potatoes or pile it onto toasted buns for a satisfying meal.

Common mistakes

One common mistake is lifting the lid during cooking, which lets out heat and steam and can extend the cooking time significantly. Another is using a brisket that is too large for your slow cooker—it should fit in a single layer.

Avoid adding extra liquid beyond the gravy; the brisket releases juices as it cooks, so too much liquid will make a thin sauce. Finally, don't skip the resting time before shredding, as it allows the juices to redistribute.

How to tell it’s done

The brisket is done when it is fork-tender—a fork should slide in with no resistance and the meat should shred easily. The internal temperature should reach at least 145°F (63°C), but because it cooks for so long, it will be well above that.

The gravy should be bubbling gently and have a rich mahogany color. If the meat is still tough, continue cooking for another hour and check again.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
