Tips for success

To prevent the cream sauce from curdling, ensure your creamy herb sauce is made with high-quality, stable ingredients. If making your own sauce ahead of time, using full-fat heavy cream rather than milk or half-and-half is recommended, as the high fat content is stable under prolonged heat.

If you want to add a touch of tanginess, you can stir a dollop of sour cream or cream cheese into the warm sauce just before layering.

If you find that your slow cooker tends to run hot and condensation builds up on the lid, it can make the top of your gratin watery.

To solve this, place a clean, dry kitchen towel or a double layer of paper towels across the top of the slow cooker pot before putting the lid on during the last hour of cooking. The towel will absorb the excess moisture, ensuring your cheese melts into a beautifully thick, bubbly crust.

Variations

  • Spicy Jalapeno Cheddar: Add finely diced fresh jalapenos to the ground beef while browning, and use pepper jack cheese alongside the cheddar for a spicy kick.
  • Smoky Bacon Gratin: Stir crumbled cooked bacon into the ground beef layer and add a pinch of smoked paprika to the cream sauce for a rich, smoky flavor profile.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freezer
Freeze in a freezer-safe container for up to 2 months; thaw in the fridge overnight before reheating.
Reheat
Reheat individual portions in the microwave, or warm the entire dish in a 350°F (175°C) oven for 20 minutes until bubbling.

Allow any leftovers to cool completely at room temperature for no more than two hours before transferring them to an airtight container. Store the container in the refrigerator for up to three to four days.

For longer storage, you can freeze individual portions in airtight, freezer-safe containers for up to two months, though the texture of the potatoes may soften slightly upon thawing.

You can brown the ground beef and prepare or purchase the creamy herb sauce up to 24 hours in advance, storing them in separate airtight containers in the refrigerator. Assemble the layers in the slow cooker pot just before you are ready to start cooking. Do not slice the potatoes too far in advance unless they are submerged in water, as they will oxidize and turn grey.

Serving ideas

Once the cooking time is complete, turn off the slow cooker and let the gratin rest with the lid off for about 10 to 15 minutes before serving. This short cooling period allows the creamy herb sauce to set and thicken up slightly, making it much easier to scoop clean, beautiful portions that hold their shape on the plate rather than pooling into a liquid mess.

Garnish the top generously with freshly chopped parsley right before serving to add a bright pop of color and a fresh, herbaceous contrast to the rich, savory flavors of the beef and cheese.

This dish is incredibly rich and filling, so it pairs beautifully alongside a crisp green salad dressed with a tangy vinaigrette, or some lightly steamed green vegetables like broccoli or green beans to help balance the overall richness of the cream.

Frequently asked questions

Can milk be used instead of the creamy herb sauce?
Using milk is not recommended because it is highly likely to curdle and separate during the long slow cooking process, resulting in a watery and broken sauce texture.
Is it necessary to peel the potatoes?
Peeling is recommended for a classic, smooth au gratin texture, but you can leave the skins on Yukon Gold potatoes if you prefer a rustic look and extra fiber.
How is a watery gratin prevented?
Ensure the potatoes are patted completely dry after slicing and that the ground beef is thoroughly drained of fat. Placing a paper towel under the slow cooker lid also helps absorb condensation.
Can this recipe be cooked on high instead of low?
Yes, this dish can be cooked on high for 3 to 4 hours, though cooking on low for 6 to 7 hours yields the most tender potatoes and best flavor integration.

Prep 20 minCook 4 hRest 15 minTotal 4 h 35 minServes 6
A serving spoon scooping up a portion of hot, bubbly slow cooker beef and potato au gratin with melted cheese pulls.

Ingredients

  • 1 1/2 lb ground beef
  • 3 lb sliced potatoes
  • 2 cups creamy herb sauce
  • 2 cups shredded cheddar cheese
  • 2 tbsp chopped fresh parsley, for serving

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Cook until the meat is fully browned and reaches a safe internal temperature of 160°F (71°C), which takes about 8 to 10 minutes. Drain any excess grease.
  2. Lightly grease the slow cooker insert. Layer half of the thinly sliced potatoes in the bottom of the pot. Pour half of the creamy herb sauce evenly over the potato layer. Top with all of the browned ground beef, then arrange the remaining sliced potatoes over the beef and pour the rest of the sauce over the top.
  3. Cover the slow cooker with its lid and cook on high for 3 to 4 hours, or on low for 6 to 7 hours, until the potatoes are tender.
  4. Uncover the slow cooker and sprinkle the shredded cheddar cheese evenly over the top potato layer. Cover again and cook on high for an additional 15 to 20 minutes until the cheese is completely melted and bubbly. Garnish with chopped fresh parsley before serving.
