Before you start

Before starting, ensure that your slow cooker is clean and positioned on a stable, heat-resistant surface. Take the chuck roast out of the refrigerator about 30 minutes before cooking to allow it to come closer to room temperature, which helps with even cooking.

Have your slicing knife and cutting board ready to prepare the onions. Ensure you have a clear space to work so that adding the ingredients to the slow cooker is seamless and tidy.

Ingredients at a glance (4)
  • 2 lb chuck roast, cut into large chunks
  • 1 large yellow onion, thinly sliced
  • 1 cup beef broth
  • 1 can (10.5 oz) condensed cheddar cheese soup

Instructions

Preparation and assembly

  1. Assemble the slow cooker
Place the chuck roast chunks into the base of the slow cooker. Scatter the sliced yellow onions over the meat. Pour the beef broth evenly over the mixture, then top with the condensed cheddar soup.
Look for The slow cooker should be filled with the beef, onions, broth, and soup in an even layer.
Tip Ensure the lid is secure to trap moisture during the long cooking process.

At this stage, the slow cooker should contain the layered ingredients: the beef chunks at the bottom, topped with onions, broth, and the soup.

Ensure the soup is spread out somewhat, though it will naturally melt and distribute during the cooking process. Check that the lid is tightly sealed to prevent moisture loss.

Slow cooking process

  1. Slow cook until tender
Cover the slow cooker and cook on low for 8 hours. The beef is ready when it reaches an internal temperature of at least 145°F (63°C). Once cooked, let the meat rest for at least 3 minutes before shredding.
Look for The beef should be soft and easily pull apart with a fork, and the sauce should look creamy and orange.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Avoid opening the lid frequently, as this releases heat and increases the cooking time.

During the long cook time, you will notice a savory, beefy aroma filling the kitchen. The beef should be submerged in the liquid for most of the time. You do not need to stir, but check that the slow cooker is indeed on the low setting to ensure the meat cooks gently and stays tender.

Shredding and final assembly

  1. Shred and serve
Remove the beef from the slow cooker and shred it into tender strands using two forks. Return the shredded meat to the slow cooker and toss it thoroughly with the creamy onion and cheddar sauce. Serve immediately on your favorite slider buns.
Look for The mixture should look uniform, with the beef strands fully coated in the thick, creamy orange sauce.
Tip Let the shredded meat rest for 5 minutes in the sauce before serving to allow the flavors to fully meld.

Once the cooking is finished, the beef should be extremely tender and the sauce should have a thick, creamy consistency. After shredding, the meat should be completely coated in the orange cheddar sauce. It should look moist and ready to be piled high onto slider buns for serving.

Common mistakes

A common mistake is using a cut of meat that is too lean, such as sirloin, which will dry out during the long cooking process rather than becoming tender. Always stick to chuck roast or similar fatty cuts.

Another mistake is crowding the slow cooker too much; ensure there is enough space for the liquid to circulate. Lastly, do not skip the shredding step, as the texture of the sliders depends on the meat being fully incorporated into the cheddar sauce.

How to tell it’s done

The beef is perfectly cooked when it reaches an internal temperature of 145°F (63°C) and pulls apart effortlessly under the pressure of a fork. The sauce should be thickened and clinging to the meat, with the onions softened and translucent.

If the meat feels resistant or tough when shredded, continue cooking for an additional 30 minutes, as slow cooker temperatures can vary slightly between different models and sizes.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
