Tips for success
For the best flavor, use a good-quality Cajun seasoning that includes paprika, garlic, and onion. If you prefer a milder dish, reduce the amount of seasoning.
To add a smoky note, use smoked paprika in the butter sauce. You can also add sliced andouille sausage for extra richness, but this is optional.
When serving, provide extra lemon wedges and hot sauce for guests to customize their plates. The sauce from the slow cooker is delicious spooned over rice or used as a dip for crusty bread.
If you have leftovers, remove the seafood from the shells before storing to make reheating easier.
Variations
- Spicy Andouille Boil: Add 1/2 lb sliced andouille sausage to the slow cooker along with the seafood. The smoky, spicy sausage infuses the sauce with extra depth and makes the dish heartier.
- Garlic Lovers' Boil: Increase the garlic in the butter sauce to 6 cloves, or add roasted garlic for a mellow, sweet flavor. Serve with extra garlic butter on the side for dipping.
- Citrus Herb Boil: Replace the Cajun seasoning with a blend of fresh thyme, oregano, and lemon zest. Add a splash of white wine to the sauce for a lighter, more herbaceous version.
- Vegetable-Packed Boil: Add halved Brussels sprouts, baby carrots, or green beans to the slow cooker. These vegetables hold up well to the long cooking time and add color and nutrition.
