Before you start

Before starting, make sure the snow crab clusters are thawed if frozen. Rinse the shrimp and pat dry. Halve the corn cobs crosswise and scrub the potatoes.

Prepare the Cajun butter sauce by melting the butter and stirring in the seasonings and lemon juice. Have all the ingredients ready to layer in the slow cooker.

Ingredients at a glance (8)
  • 2 lb snow crab clusters
  • 2 lb raw jumbo shrimp, peeled and deveined
  • 4 ears sweet corn, halved
  • 1 1/2 lb baby red bliss potatoes
  • 1 cup melted Cajun garlic-paprika butter
  • 1/4 cup fresh lemon juice
  • Lemon wedges, for serving
  • 2 cups cooked white jasmine rice, for serving

Instructions

Layer and Sauce

  1. Layer the Seafood and Vegetables
Place the snow crab clusters in the bottom of a 6-quart slow cooker. Add the raw jumbo shrimp on top, then arrange the halved corn cobs and baby red potatoes around and between the seafood.
Look for The slow cooker should be about two-thirds full, with the seafood and vegetables nestled together.
Tip If the crab clusters are large, break them into smaller sections so they fit easily.
  2. Pour the Cajun Butter Sauce
In a small saucepan, melt the butter with Cajun seasoning, garlic, and paprika until fragrant. Stir in the fresh lemon juice. Pour the spiced butter evenly over the seafood and vegetables.
Look for The sauce should coat everything, pooling slightly at the bottom.
Tip For extra heat, add a pinch of cayenne to the butter mixture.

At this point, the slow cooker is filled with raw seafood and vegetables, and the spiced butter sauce is poured over the top.

The ingredients are colorful and glistening, with the sauce pooling at the bottom. The aroma of garlic and paprika is just beginning to develop.

Slow-Cook

  1. Slow-Cook the Boil
Cover the slow cooker and cook on low for 4 hours, or on high for 2 hours, until the potatoes are tender and the shrimp are pink and opaque. The crab will be heated through.
Look for The sauce should be bubbling gently, and the kitchen will smell richly of garlic and spice.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Avoid lifting the lid during cooking to keep the heat steady.
  2. Check the Seafood
After the minimum cooking time, check that the shrimp are pink and firm to the touch, and the crab meat is hot throughout. The potatoes should be easily pierced with a fork.
Look for The shrimp should be curled and opaque, not translucent.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip If the potatoes are still hard, continue cooking in 15-minute increments.

After several hours, the slow cooker is bubbling gently, and steam rises with a rich, spicy scent. The shrimp have turned pink and curled, the crab is heated through, and the potatoes are tender. The sauce has melded into a cohesive, buttery broth.

Scoop and Serve

  1. Scoop and Serve
Using a slotted spoon, scoop the seafood, corn, and potatoes onto a large platter. Drizzle with additional sauce from the slow cooker. Serve with lemon wedges and steamed jasmine rice.
Look for The seafood should be glistening with butter sauce, and the vegetables tender.
Tip Serve immediately while hot, with extra sauce on the side.

The seafood boil is ready to be plated. The crab clusters are bright red, the shrimp are pink and juicy, and the corn and potatoes are coated in a glossy, seasoned butter sauce. The dish looks and smells like a coastal feast.

Common mistakes

Avoid overcooking the shrimp, as they can become tough. Check them at the minimum cooking time. Do not lift the lid frequently, as this releases heat and extends cooking time.

If the sauce seems too thin, you can remove the seafood and vegetables and simmer the sauce on the stovetop to reduce it slightly.

How to tell it’s done

The dish is done when the shrimp are pink and opaque, the crab meat is hot throughout, and the potatoes are easily pierced with a fork.

The internal temperature of the shellfish should reach 145°F (63°C). The sauce should be bubbly and fragrant. If the potatoes are still firm, continue cooking in 15-minute increments until tender.

  • Shellfish: 145°F (63°C) in the thickest part
