Tips for success
For the best texture, use full-fat sour cream and a high-quality Monterey Jack that melts smoothly. Pre-shredded cheese often contains anti-caking agents that can make the sauce grainy, so shredding your own is worth it.
If you prefer a thicker sauce, remove the lid for the last 30 minutes of cooking to let some liquid evaporate.
This recipe is incredibly versatile. Serve it over rice, in tacos, or as a filling for burritos. The leftovers taste even better the next day as the flavors meld.
You can also use the barbacoa in quesadillas, nachos, or as a topping for baked potatoes. The possibilities are endless, and each one is delicious.
Variations
- Spicy Chipotle Version: Add 2 chipotle peppers in adobo sauce, minced, along with the salsa. This adds a smoky, spicy kick that pairs well with the creamy cheese. Adjust the amount to your heat preference.
- Chicken Barbacoa: Swap the beef chuck for 2 pounds of boneless, skinless chicken thighs. Cook on low for 6-7 hours, then shred. Ensure the chicken reaches 165°F (74°C) before serving.
- Vegetarian Bean and Corn Stew: Omit the beef and add an extra can of black beans and an extra cup of corn. Cook on low for 4-5 hours. The sour cream and cheese still make it creamy and satisfying.
- Creamy Green Salsa Version: Use green salsa (salsa verde) instead of red. The tomatillo flavor is brighter and more tangy, and it pairs well with the corn and black beans. Add a pinch of ground cumin for extra warmth.
Storage and make-ahead

- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Or microwave in 1-minute intervals, stirring between, until heated through.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to develop, making it even more delicious. Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if needed to loosen the sauce.
This dish is perfect for making ahead. Assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time since the pot starts cold.
Serving ideas
Serve the barbacoa warm with soft flour tortillas, letting everyone build their own tacos. Offer toppings like diced white onion, fresh cilantro, sliced avocado, or a squeeze of lime.
A side of Mexican rice or a simple green salad rounds out the meal. The creamy, smoky sauce is rich enough to stand on its own, but the bright toppings balance it beautifully.
For a low-carb option, serve the barbacoa over cauliflower rice or in lettuce cups. It also makes a fantastic filling for burrito bowls, with the barbacoa spooned over cilantro-lime rice and black beans. However you serve it, this dish is sure to become a family favorite.

Slow Cooker Barbacoa Beef and Black Bean Fiesta

Ingredients
- 2 1/2 lb beef chuck cubes
- 2 cans (15 oz each) black beans, rinsed
- 1 1/2 cups fire-roasted corn kernels
- 1 1/2 cups chunky roasted red tomato salsa
- 1 cup sour cream
- 2 cups shredded Monterey Jack cheese
Instructions
- Place the beef chuck cubes in the bottom of a 6-quart slow cooker. Spread them into an even layer. Rinse the black beans in a colander under cool water, then add them over the beef along with the fire-roasted corn and the chunky salsa. Do not stir.
- Dollop the sour cream over the top of the mixture, then sprinkle the shredded Monterey Jack cheese evenly over everything. Do not stir. The sour cream and cheese will melt into the sauce as the slow cooker works.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the beef is fork-tender and easily shreds. The mixture will look bubbly and the cheese will be fully melted into the sauce. Let it rest for 3 minutes before slicing.
- Using two forks, shred the beef directly in the slow cooker. Stir the shredded beef into the sauce, beans, and corn until everything is well combined. Let the mixture sit for 5 minutes so the flavors meld.
- Warm flour tortillas on a dry skillet or in the microwave. Spoon the barbacoa mixture over the tortillas or serve it alongside for scooping. Garnish with fresh cilantro, diced onion, or lime wedges if desired.
