Tips for success

For the best flavor, use a high-quality aged balsamic vinegar. The thicker consistency and sweeter notes make a difference in the final sauce. If you can’t find aged balsamic, you can reduce regular balsamic vinegar on the stovetop before adding it to the slow cooker.

This concentrates the flavor and helps thicken the sauce. Another tip is to toast the rosemary sprigs briefly in a dry skillet to release their oils before adding them to the pot.

To make the sauce extra glossy, you can whisk in a tablespoon of butter at the end, but this is optional. If you prefer a smoother sauce, you can blend the cranberry compote with an immersion blender, but leaving it chunky adds texture.

For a more intense orange flavor, add a strip of orange zest along with the juice. Finally, don’t be afraid to adjust the sweetness to your liking—add more honey if you prefer a sweeter sauce.

Variations

  • Add a Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a minced chipotle pepper in adobo sauce to the slow cooker along with the other ingredients. The heat will balance the sweetness of the honey and cranberries, creating a sweet-heat flavor profile.
  • Use Chicken Thighs: Substitute 2 pounds of boneless, skinless chicken thighs for the pork tenderloin. Cook on low for 4 hours, or until the chicken registers 165°F (74°C). The cranberry balsamic sauce pairs beautifully with chicken.
  • Make it Vegetarian: Replace the pork with 2 pounds of firm tofu or tempeh, sliced into 1-inch thick pieces. Cook on low for 2 hours, or until heated through. The sauce will still be delicious, and the tofu will absorb the flavors.
  • Add Dried Cranberries: For extra texture, add 1/2 cup of dried cranberries along with the fresh ones. They will plump up during cooking and add a chewy contrast to the soft compote.

Storage and make-ahead

Fridge
Store leftover pork and compote in an airtight container in the refrigerator for up to 4 days.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently on the stovetop or in the microwave until warmed through, adding a splash of water or broth if the sauce has thickened too much.

Store leftover pork and compote in an airtight container in the refrigerator for up to 4 days. The pork will continue to absorb the sauce, so it may become more tender. Reheat gently on the stovetop or in the microwave until warmed through, adding a splash of water or broth if the sauce has thickened too much.

This recipe is perfect for making ahead. You can assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, simply place the insert in the slow cooker and cook as directed. The pork can also be cooked a day ahead, sliced, and stored with the compote. Reheat gently before serving.

Serving ideas

Serve the sliced pork tenderloin with the balsamic cranberry compote spooned over the top. This dish pairs beautifully with mashed potatoes, roasted vegetables, or a simple green salad.

The sweet-tart sauce also works well with rice or polenta, soaking into the grains for extra flavor. For a festive presentation, garnish with extra fresh rosemary sprigs.

The pork is also delicious served cold in sandwiches the next day, with a smear of the cranberry compote. For a lighter meal, serve it over a bed of arugula with shaved Parmesan.

The compote can also be served on the side as a condiment for other meats, like roasted chicken or turkey. This recipe is versatile and sure to become a favorite.

Frequently asked questions

Can this recipe be made with frozen cranberries?
Yes, frozen cranberries work well in this recipe. You can add them directly to the slow cooker without thawing. They may release a bit more liquid, so the sauce might be slightly thinner. To thicken it, you can simmer the sauce on the stovetop for a few minutes after removing the pork.
How long does the pork need to rest before slicing?
Let the pork rest for at least 3 minutes after cooking. This allows the juices to redistribute throughout the meat, resulting in moister and more flavorful slices. If you slice it immediately, the juices will run out onto the cutting board, leaving the pork dry.
Can this recipe be cooked on high instead of low?
Yes, you can cook it on high for about 2 hours, but the pork may not be as tender. Low heat is recommended for the best texture, as it allows the collagen to break down slowly. If you’re short on time, high heat is a workable option, but check the internal temperature early.
What can be used instead of honey?
Maple syrup or agave nectar can replace honey in equal amounts. Brown sugar also works, but dissolve it in the orange juice first. Each sweetener will slightly alter the flavor, but the dish will still be delicious.
Can this dish be frozen?
Yes, this dish freezes well. Store the cooled pork and compote in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or microwave. The texture may change slightly, but the flavor will remain.

Ingredients

  • 2 lb pork tenderloin
  • 2 cups fresh cranberries
  • 1/2 cup aged balsamic vinegar
  • 1/2 cup honey
  • 1/3 cup orange juice
  • 3 sprigs fresh rosemary
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Pat the pork tenderloins dry with paper towels. Season them all over with kosher salt and black pepper. Place the tenderloins in the bottom of a 6-quart slow cooker, arranging them side by side.
  2. Scatter the fresh cranberries over and around the pork. Pour the aged balsamic vinegar, honey, and orange juice over the top. Tuck the fresh rosemary sprigs into the liquid.
  3. Cover the slow cooker and cook on LOW for 3.5 hours, until the cranberries have burst into a glossy compote and the pork is fork-tender. The pork should register 145°F (63°C) when checked with an instant-read thermometer. Let it rest for 3 minutes before slicing.
  4. Carefully transfer the pork tenderloins to a cutting board and let them rest for at least 3 minutes. This allows the juices to redistribute, ensuring moist slices.
  5. Slice the rested pork tenderloin into 1/2-inch medallions. Arrange the slices on a platter and spoon the warm balsamic-cranberry compote generously over the top. Garnish with a few fresh rosemary leaves if desired.
