Tips for success

For a deeper, more complex flavor, you can sear the veal cubes in a hot pan with a little oil until browned on all sides before adding them to the slow cooker. While not strictly necessary, this step adds a layer of caramelization that enhances the final sauce.

If you choose this method, ensure you deglaze the pan with a little water to capture all the flavorful browned bits and pour that liquid into the slow cooker as well.

If you prefer a thicker stew, you can stir in a small amount of cornstarch mixed with cold water during the final 30 minutes of cooking. This will give the sauce a more luxurious, velvety texture.

Be sure to stir gently so you do not break apart the tender pieces of veal or the soft vegetables. Adjust the seasoning with a touch of salt or cracked black pepper at the very end to suit your personal preference.

Variations

  • Earthy Mushroom Variation: Add 8 ounces of sliced cremini mushrooms during the final hour of cooking. The mushrooms absorb the savory juices and add a wonderful, meaty texture to the finished stew.
  • Wine-Infused Stew: Replace half of the water with a dry white wine. The acidity of the wine helps tenderize the veal and adds a sophisticated, complex depth to the final sauce.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days in the refrigerator.
Freezer
Freeze in a freezer-safe bag or container for up to 2 months.
Reheat
Thaw in the refrigerator overnight and reheat on the stovetop over low heat until steaming hot.

Cool leftovers within 2 hours of cooking, then transfer to an airtight container and place in the refrigerator. This ensures food safety by preventing the growth of harmful bacteria. The stew will remain fresh for up to three days when stored in the coldest part of the refrigerator. Always reheat the leftovers until they are steaming hot throughout before serving.

This stew is an excellent candidate for making ahead of time as the flavors often meld and improve after sitting for a day. Simply prepare the recipe as directed, allow it to cool completely within 2 hours, and store it in the refrigerator.

When you are ready to eat, reheat it slowly on the stovetop or in the microwave, adding a tiny splash of water if the sauce has thickened too much in the fridge. It tastes even better the second day.

Serving ideas

Serve this hearty veal stew in pre-warmed shallow bowls to help retain the heat. A side of crusty, artisanal bread is perfect for mopping up the rich, glossy sauce. You could also serve it over a bed of creamy mashed potatoes or buttered egg noodles to turn it into a more substantial meal. Garnish with a few fresh parsley leaves if you want a pop of color, though the stew is beautiful on its own.

Pair this dish with a crisp green salad featuring a bright vinaigrette to balance the savory, rich notes of the stew. A light, acidic dressing cuts through the depth of the slow-cooked meat and vegetables, providing a refreshing contrast.

For beverages, a medium-bodied red wine or a crisp sparkling cider complements the earthiness of the root vegetables and the delicate flavor of the veal, making for an elegant and satisfying autumn-inspired dinner menu.

Frequently asked questions

Can this stew be cooked on a high setting?
While the slow cooker can be set to high, the low setting is strongly recommended for veal. The lower temperature is essential for breaking down the connective tissue without drying out the meat, ensuring it becomes tender and succulent rather than tough.
Is it necessary to brown the veal first?
Browning is optional but highly recommended. Searing the meat in a hot pan before adding it to the slow cooker creates a richer, more flavorful sauce through the process of caramelization. It adds a professional depth that elevates the final dish.
Why is the sauce thin after cooking?
Slow cookers trap moisture, so the sauce may be thinner than a stovetop stew. If you prefer a thicker consistency, remove a few pieces of vegetable, mash them into a paste, and stir them back into the stew, or use a small amount of cornstarch slurry.
