Before you start

Before starting, ensure all ingredients are ready and measured. Remove the chicken drumsticks from the refrigerator just before you begin to maintain food safety standards. Dice the red bell peppers into small, uniform pieces so they cook down evenly.

Have your slow cooker clean and ready on a level surface. Using a dedicated mixing bowl to combine the apricot preserves and habanero sauce before adding them to the slow cooker ensures that the glaze is uniform and coats the chicken thoroughly once it starts cooking.

Ingredients at a glance (5)
  • 8 chicken drumsticks, skinless and bone-in
  • 1 cup red bell pepper, diced
  • 1 tsp garlic powder
  • 1 cup apricot preserves
  • 2 tbsp habanero hot sauce

Instructions

Layering and Seasoning

  1. Prepare the slow cooker
Arrange the chicken drumsticks in a single layer at the bottom of the slow cooker insert. Ensure they are placed evenly to allow for uniform cooking throughout the process.
Look for Drumsticks are arranged in a flat, even layer.
Tip Removing the skin helps the sauce penetrate the meat more effectively during the slow cooking process.
  2. Add aromatics and seasoning
Scatter the diced red bell pepper over the top of the chicken pieces. Evenly sprinkle the garlic powder over the chicken and peppers to ensure balanced seasoning across all pieces.
Look for Peppers are distributed across the chicken.
Tip Use fresh bell peppers for the best texture and color contrast in the finished dish.

At this stage, the drumsticks should be arranged neatly in the bottom of the slow cooker, with the diced red bell peppers scattered over them. The garlic powder should be evenly distributed. Everything should look organized and ready to receive the glaze. Ensure the slow cooker insert is dry before you start to prevent any uneven heating during the initial phase of the cooking process.

Glazing the Chicken

  1. Glaze the chicken
In a small bowl, stir together the apricot preserves and the habanero hot sauce until well combined. Pour this mixture evenly over the chicken and peppers in the slow cooker.
Look for Sauce is fully combined and covers the chicken.
Tip Scrape the bowl clean with a spatula to ensure every bit of the flavorful sauce is used.

Once the apricot and habanero mixture is poured over, ensure it covers as much of the chicken as possible. The mixture should look vibrant and thick. At this point, double-check that the lid is securely in place. The slow cooker will now begin to gently braise the chicken, allowing the sugars in the preserves to melt and combine with the spicy hot sauce and the juices from the poultry.

Slow Braising and Finishing

  1. Cook and serve
Cover the slow cooker and cook on low for 4 hours. Once finished, ensure the internal temperature of the chicken reaches at least 165°F (74°C). Allow the chicken to rest for 5 minutes before serving to ensure tenderness.
Look for Sauce is thick and chicken is tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce is too thin, you can remove the chicken and reduce the sauce on the stovetop for a few minutes.

After four hours, the chicken should look deeply glazed and the sauce will have reduced into a thick, syrupy consistency. The red peppers will be soft and integrated into the sauce.

Check the internal temperature with a thermometer to confirm it has reached 165°F (74°C). The kitchen should smell fragrant and slightly sweet with a hint of spice. The meat should be very tender and ready for a short rest.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent even cooking and lead to excess moisture that thins the sauce. Always ensure the drumsticks are in a single layer. Another error is failing to combine the sauce ingredients separately before adding them; mixing them in a bowl first ensures the heat and sweetness are evenly distributed.

Finally, avoid lifting the lid too frequently during the cooking process, as this releases heat and moisture, significantly increasing the time required for the chicken to reach a safe temperature.

How to tell it’s done

The chicken is done when the meat is tender and easily pulls away from the bone. Use a meat thermometer to check the thickest part of the drumstick, ensuring it reaches an internal temperature of at least 165°F (74°C).

The sauce should be thickened and glossy, clinging to the chicken pieces. If the sauce appears too thin after the cooking time, you can briefly remove the chicken and simmer the sauce in a pan on the stove to achieve your preferred consistency.

  • Poultry: 165°F (74°C) in the thickest part
