Tips for success
For the best texture, use a combination of cheddar and a bit of mozzarella if you like a stretchy melt, but keep the cheddar as the base for flavor.
If you prefer a spicier kick, add a pinch of cayenne or smoked paprika to the cream cheese sauce. To make the cracker crumbs extra buttery, toss them with a teaspoon of melted butter before sprinkling.
If you have leftover cooked chicken, this recipe can be adapted by reducing the bake time to just heat through and melt the cheese.
For a lower-carb version, swap the potatoes for broccoli or cauliflower florets, but note that they cook faster, so add them halfway through baking. Always let the pan rest before serving to allow the flavors to meld.
Variations
- Spicy Southwest: Add 1 teaspoon chili powder and 1/2 teaspoon cumin to the cream cheese sauce. Use pepper jack cheese instead of cheddar and top with chopped pickled jalapeños before baking.
- Herb and Lemon: Stir 1 tablespoon chopped fresh thyme and 1 teaspoon lemon zest into the cream cheese sauce. Replace the cracker crumbs with panko mixed with grated Parmesan and lemon zest.
- BBQ Chicken: Spread a thin layer of barbecue sauce over the chicken before adding the cream cheese mixture. Use smoked cheddar and top with crispy fried onions instead of cracker crumbs.
- Vegetable Boost: Add 2 cups of broccoli florets or green beans to the sheet pan along with the potatoes. Toss them with a little olive oil and salt before baking. The vegetables will roast alongside the chicken.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently to avoid drying out the chicken.
- Freezer
- Freeze in a single layer on a baking sheet, then transfer to a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a 350°F (175°C) oven for 10–15 minutes, or microwave in 30-second bursts until hot and bubbly.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) for 10–15 minutes, or in the microwave in 30-second intervals until hot. The cracker crumbs may lose some crunch upon reheating, but the dish will still be delicious.
You can assemble the entire sheet pan up to 24 hours in advance. Cover and refrigerate, then bake as directed, adding about 5 minutes to the cook time since the pan starts cold.
Alternatively, prepare the cream cheese sauce and chop the potatoes ahead of time, storing them separately in the fridge.
Serving ideas
Serve the chicken and potatoes directly from the sheet pan for a casual family dinner, or transfer to a platter for a more polished presentation.
Garnish with fresh chopped parsley or chives if desired, though the video does not show this — it's optional. Pair with a simple green salad or steamed vegetables to round out the meal.
This dish is hearty enough to stand alone, but it also works well with a side of crusty bread to soak up any extra cheese sauce. For a complete meal, add a light vegetable side like roasted asparagus or a crisp green salad. The leftovers make excellent sandwiches or wraps the next day.

Sheet Pan Million Dollar Chicken and Potatoes

Ingredients
- 4 boneless skinless chicken breasts
- 1 1/2 lb baby potatoes, halved
- 8 oz cream cheese, softened
- 3 cloves garlic, minced
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup cooked bacon bits
- 1/2 cup buttery cracker crumbs
Instructions
- Heat the oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper. Arrange the halved baby potatoes in a single layer around the edges of the pan, leaving the center open. Place the chicken breasts in the center of the pan, spacing them evenly.
- In a small bowl, stir the softened cream cheese with the minced garlic until smooth and spreadable. If the cream cheese is too firm, microwave it in 10-second intervals to soften.
- Using a spatula or the back of a spoon, spread the cream cheese mixture evenly over the top of each chicken breast, covering the surface completely.
- Sprinkle the shredded cheddar cheese evenly over the chicken and the potatoes. Then scatter the cooked bacon bits and buttery cracker crumbs over the top, focusing on the chicken but letting some fall onto the potatoes.
- Place the sheet pan in the preheated oven and bake for 30 to 35 minutes, until the chicken is cooked through and the potatoes are tender when pierced with a fork.
- Insert an instant-read thermometer into the thickest part of a chicken breast. The chicken is done when it registers 165°F (74°C). If it hasn't reached that temperature, return the pan to the oven and check again after 5 minutes.
- Remove the pan from the oven and let it rest for 5 minutes. This allows the juices to redistribute. Serve the chicken with the potatoes and any melted cheese from the pan.
