Before you start

Heat the oven to 400°F (200°C) and line a large rimmed sheet pan with parchment paper. Halve the baby potatoes if not already done, and pat the chicken breasts dry.

Soften the cream cheese if needed and mince the garlic. Measure out the cheddar, bacon bits, and cracker crumbs so everything is ready to assemble quickly. Have a spatula and instant-read thermometer on hand.

Ingredients at a glance (7)
  • 4 boneless skinless chicken breasts
  • 1 1/2 lb baby potatoes, halved
  • 8 oz cream cheese, softened
  • 3 cloves garlic, minced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/2 cup buttery cracker crumbs

Instructions

Assemble the Pan

  1. Prep the Pan and Chicken
Heat the oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper. Arrange the halved baby potatoes in a single layer around the edges of the pan, leaving the center open. Place the chicken breasts in the center of the pan, spacing them evenly.
Look for The pan should have potatoes ringing the chicken, with the chicken breasts not touching.
Tip Pat the chicken dry with paper towels before arranging so the sauce clings better.
  2. Make the Cream Cheese Sauce
In a small bowl, stir the softened cream cheese with the minced garlic until smooth and spreadable. If the cream cheese is too firm, microwave it in 10-second intervals to soften.
Look for The mixture should be thick but spreadable, with no large lumps of cream cheese.
Tip Use a fork to mash and stir for a smooth texture.
  3. Spread the Sauce
Using a spatula or the back of a spoon, spread the cream cheese mixture evenly over the top of each chicken breast, covering the surface completely.
Look for Each breast should be fully coated with a thick layer of sauce.
Tip Leave a small border around the edges so the sauce doesn't drip off during baking.

At this point, the pan should show raw chicken breasts centered and halved baby potatoes arranged around them. The cream cheese mixture is spread over each breast in a thick, even layer.

The potatoes are plain, and the pan looks neat and ready for the toppings. Check that the chicken is fully coated and the potatoes are in a single layer.

Bake the Casserole

  1. Top with Cheddar, Bacon, and Crumbs
Sprinkle the shredded cheddar cheese evenly over the chicken and the potatoes. Then scatter the cooked bacon bits and buttery cracker crumbs over the top, focusing on the chicken but letting some fall onto the potatoes.
Look for The cheese, bacon, and crumbs should form a generous topping over the chicken and potatoes.
Tip For extra crunch, press the cracker crumbs lightly into the cheese.
  2. Bake the Sheet Pan
Place the sheet pan in the preheated oven and bake for 30 to 35 minutes, until the chicken is cooked through and the potatoes are tender when pierced with a fork.
Look for The cheese should be melted and golden, the bacon crisp, and the potatoes fork-tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the topping browns too quickly, loosely tent the pan with foil for the last 10 minutes.
  3. Check the Chicken Temperature
Insert an instant-read thermometer into the thickest part of a chicken breast. The chicken is done when it registers 165°F (74°C). If it hasn't reached that temperature, return the pan to the oven and check again after 5 minutes.
Look for The thermometer should read 165°F (74°C) with no pink remaining in the center.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Clean the thermometer between checks to avoid cross-contamination.

After baking, the cheese should be melted and bubbly, with the bacon and cracker crumbs toasted. The potatoes should be golden and tender, and the chicken should be opaque with no pink. The aroma is rich and savory. Use a thermometer to confirm the chicken reaches 165°F (74°C) before proceeding.

Rest and Serve

  1. Rest and Serve
Remove the pan from the oven and let it rest for 5 minutes. This allows the juices to redistribute. Serve the chicken with the potatoes and any melted cheese from the pan.
Look for The chicken should be juicy, and the cheese should be slightly set but still creamy.
Tip Use a spatula to lift the chicken and potatoes, scraping up any crispy bits from the parchment.

After resting, the pan should look glossy and inviting. The cheese may have slightly set, and the potatoes are fork-tender. The chicken is juicy and pulls apart easily. Serve hot, scooping up any crispy bits from the parchment.

Common mistakes

Avoid overcrowding the pan — the chicken and potatoes should be in a single layer so they cook evenly and brown properly. Don't skip lining the pan with parchment; it prevents sticking and makes cleanup easy.

If the chicken breasts are uneven in thickness, they may cook at different rates; pound them to even thickness or check each breast individually. Also, don't open the oven door too often, as it lowers the temperature and increases cooking time.

How to tell it’s done

The chicken is done when an instant-read thermometer inserted into the thickest part registers 165°F (74°C).

The potatoes should be tender when pierced with a fork, and the cheese should be melted and golden with some crispy edges. Let the pan rest for 5 minutes before serving so the juices redistribute and the topping sets slightly.

  • Poultry: 165°F (74°C) in the thickest part
