Tips for success
For the best caramelization, do not toss the ingredients too often. A single stir halfway through is enough to ensure even browning without breaking up the sauce coating.
If you want extra char on the sausage, you can turn on the broiler for the last 2 to 3 minutes, but watch closely so the sauce does not burn. The sauce will thicken as it cools, so serve the dish warm.
To make this a complete meal, serve the kielbasa and peppers over rice, quinoa, or with crusty bread to soak up the extra sauce. You can also add a side of roasted potatoes or a simple green salad.
If you have leftover sauce, drizzle a little more over the top just before serving for an extra punch of flavor. The lime zest is best added right at the end, as its oils fade quickly.
Variations
- Milder version: Use a sweet mango sauce or a mango chutney mixed with a teaspoon of lime juice. Omit the habanero or use a mild hot sauce. The dish will still be flavorful but without the heat.
- Add pineapple: Toss 1 cup of fresh pineapple chunks onto the pan along with the peppers. The pineapple caramelizes and adds a tropical sweetness that pairs well with the mango habanero sauce.
- Use chicken sausage: Substitute smoked chicken sausage for the kielbasa. The cooking time stays the same, and the lighter sausage still benefits from the glaze.
- Make it a bowl: Serve the finished kielbasa and peppers over cooked rice or quinoa, and top with extra cilantro and a squeeze of lime. Add avocado slices for extra creaminess.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet or microwave until hot.
- Freezer
- Freeze leftovers in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over medium heat, stirring occasionally, until heated through, about 5 minutes.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The sauce will continue to flavor the sausage and vegetables as they sit. Reheat gently in a skillet over medium heat, or in the microwave, until warmed through. The peppers and onions will soften further, but the flavor remains delicious.
You can prep the ingredients up to a day in advance: cut the kielbasa, peppers, and onion, and store them in a covered container in the refrigerator. When ready to cook, spread them on the pan, drizzle with sauce, and roast.
The sauce can also be measured out ahead of time. The cilantro and lime zest should be added after roasting, but they can be chopped and zested a few hours ahead.
Serving ideas
Serve the sheet pan kielbasa and peppers straight from the pan for a casual dinner, or transfer to a platter for a more polished presentation. The dish is hearty enough on its own, but it pairs well with rice, polenta, or crusty bread to catch every bit of the sticky sauce. A side of steamed greens or a crisp salad adds freshness.
For a fun family-style meal, set out the pan with a stack of warm tortillas and let everyone build their own tacos. The sweet and spicy glaze works beautifully with the smoky sausage.
You can also serve it over creamy grits or mashed potatoes for a comforting cold-weather dinner. Leftovers make a great filling for sandwiches or wraps the next day.

Sheet Pan Mango Habanero Kielbasa with Peppers

Ingredients
- 1 1/2 lb smoked kielbasa, cut into 1/2-inch coins
- 2 red bell peppers, cut into 1-inch chunks
- 2 yellow bell peppers, cut into 1-inch chunks
- 1 red onion, cut into wedges
- 1/2 cup mango habanero sauce
- 1/4 cup chopped fresh cilantro
- 1 tsp lime zest
Instructions
- Heat the oven to 425°F (220°C). Line a sheet pan with parchment paper. In a large bowl, toss the kielbasa coins, red and yellow pepper chunks, and red onion wedges together until combined.
- Arrange the kielbasa and vegetable mixture in a single layer on the prepared sheet pan. Make sure the sausage coins are not overlapping too much, so they brown rather than steam.
- Spoon the mango habanero sauce over the sausage and vegetables. Use the back of a spoon to spread it slightly, coating as much of the surface as possible.
- Place the sheet pan in the oven and roast for 20 to 25 minutes, stirring once halfway through, until the sausage coins are browned at the edges and the peppers and onions are soft but not charred. Let it rest for 3 minutes before slicing.
- Remove the pan from the oven. Sprinkle the chopped cilantro and lime zest evenly over the hot sausage and peppers. Let rest for 2 to 3 minutes before serving.
