Tips for success
For the best cheese pull, use a good melting cheese like cheddar, provolone, or mozzarella. Slice it thinly so it melts evenly without becoming too runny.
If you want an extra crispy bottom, place the pockets on a preheated baking sheet or a pizza stone. This will give the underside a nice crunch.
To achieve a shiny, golden crust, brush the pockets with a beaten egg mixed with a tablespoon of water before sprinkling with sesame seeds.
This creates a beautiful glaze. If you prefer a softer crust, you can brush with melted butter after baking. Serve the pockets warm, as the cheese will set as they cool.
Variations
- Spicy Jalapeño Popper: Add sliced pickled jalapeños and a few spoonfuls of cream cheese to the filling. Use pepper jack cheese instead of cheddar for a spicy, creamy kick.
- BBQ Bacon Burger: Mix 2 tablespoons of barbecue sauce into the ground beef and top with crispy bacon bits and smoked gouda. Brush the baked pockets with extra BBQ sauce before serving.
- Mushroom Swiss: Sauté sliced mushrooms with a little butter and garlic, then add them along with Swiss cheese to the filling. The earthy mushrooms pair beautifully with the rich beef.
- Breakfast Pocket: Swap the beef for breakfast sausage and add a scrambled egg and a slice of American cheese. Serve for breakfast or brunch with maple syrup for dipping.

Store any leftover pockets in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a 350°F (175°C) oven for 10-15 minutes, or until heated through. The crust will crisp up again, and the cheese will melt. Avoid microwaving, as it can make the dough soggy.
The dough can be prepared up to 24 hours in advance. After kneading, place it in a greased bowl, cover, and refrigerate. Let it come to room temperature before rolling out.
You can also assemble the pockets completely and refrigerate them unbaked for up to 12 hours. Bake them straight from the fridge, adding a few extra minutes to the cooking time.
Serving ideas
Serve the Sealed Stuffed Burger Pockets hot, straight from the oven. They are a complete meal on their own, but you can pair them with a simple green salad, coleslaw, or crispy fries. For a fun twist, offer dipping sauces like ketchup, mustard, or a spicy mayo on the side.
These pockets are perfect for parties and gatherings because they are easy to eat by hand and can be made ahead.
Slice them in half to show off the cheesy interior, or leave them whole for a dramatic reveal. They are also great for lunchboxes – just pack them warm and they will stay delicious for hours.

Sealed Stuffed Burger Pockets with Molten Cheddar

Ingredients
- 2 1/2 cups all-purpose flour
- 3/4 cup whole milk, warm
- 2 1/4 tsp active dry yeast
- 2 tbsp granulated sugar
- 4 tbsp unsalted butter, melted
- 1 large egg
- 1 tsp kosher salt
- 1 lb ground beef (80% lean)
- 1 tbsp burger seasoning (salt, pepper, garlic powder)
- 1 cup caramelized onions
- 1/2 cup dill pickle slices
- 4 slices cheddar cheese
- 2 tbsp white sesame seeds
Instructions
- In a small bowl, combine warm milk, sugar, and yeast. Let stand for 5 minutes until frothy. In a large bowl, whisk flour and salt. Add the yeast mixture, melted butter, and egg. Stir until a shaggy dough forms, then turn onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot for 1 hour, or until doubled.
- In a bowl, combine the ground beef with the burger seasoning. Mix gently until just combined. Divide the beef into 4 equal portions and shape each into a flat patty about 4 inches wide. Set aside. Have the caramelized onions, pickles, and cheddar slices ready.
- Punch down the risen dough and divide into 4 equal pieces. On a floured surface, roll each piece into a round about 6 inches in diameter. Place one beef patty in the center of each round. Top with a quarter of the caramelized onions, pickle slices, and one slice of cheddar. Gather the dough edges over the filling and pinch tightly to seal, forming a smooth dome.
- Place the sealed pockets seam-side down on a parchment-lined baking sheet. Brush the tops with a little beaten egg or milk if desired, then sprinkle with sesame seeds. Bake in a preheated oven at 350°F (180°C) for 22 minutes, until the buns are puffed, shiny, and deep golden brown. The internal temperature of the beef should reach at least 160°F (71°C).
- Remove the pockets from the oven and let them rest on the baking sheet for 5 minutes. This allows the juices to redistribute and the cheese to set slightly. Serve warm, slicing each pocket open with a chef's knife to reveal the molten cheddar and juicy beef.
