Tips for success

To get the absolute best results, try baking your tater tots until they are extra crispy before rolling them into the tortillas. This extra crunch helps them stand up to the moisture of the scrambled eggs and the rich country gravy, maintaining their texture even after baking.

If you prefer a bit of heat, you can use hot country sausage or add a pinch of cayenne pepper and extra black pepper to the gravy.

Another great tip is to warm your flour tortillas in the microwave for about 15 to 20 seconds before assembling. Warm tortillas are much more pliable and less likely to rip or tear when you roll them up tightly with the filling.

When pouring the gravy, make sure to spread it all the way to the edges of the baking dish to cover the ends of the tortillas, which prevents them from turning hard and crunchy in the oven.

Variations

  • Spicy Chorizo Enchiladas: Swap the country sausage for fresh Mexican chorizo and use pepper jack cheese exclusively. Top with sliced jalapeños and cilantro before serving.
  • Bacon and Cheddar Enchiladas: Replace the country sausage with crispy crumbled bacon, and use a smoky bacon-flavored gravy for a delicious twist.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days, cooling them for under 2 hours.
Freezer
This dish is not recommended for freezing as the gravy and eggs can separate and become watery upon thawing.
Reheat
Reheat portions in the microwave for 1 to 2 minutes, or covered with foil in a 350°F (175°C) oven for 15 minutes.

If you have leftovers, let them cool completely at room temperature for no more than two hours before transferring them to an airtight container. Store the container in the refrigerator for up to three days. Because of the gravy and eggs, these enchiladas are best enjoyed within this timeframe to maintain their texture and prevent the tortillas from becoming overly soggy.

To make this dish ahead of time, you can fully assemble the enchiladas in the baking dish, cover it tightly with plastic wrap, and store it in the refrigerator overnight. In the morning, remove the plastic wrap, let the dish sit at room temperature for 20 minutes while the oven preheats, and then bake as directed, adding 5 to 10 minutes to the baking time.

Serving ideas

Serve these rich and hearty enchiladas hot, straight from the baking dish. Use a wide spatula to lift each serving carefully, showing off that spectacular, gooey cheese pull.

They are incredibly filling on their own, but they pair wonderfully with a side of fresh seasonal fruit, a simple green salad with a light vinaigrette, or some sliced avocados to cut through the richness of the sausage and cheese, creating a delightful contrast of flavors.

For an extra touch of flavor, offer a variety of toppings at the table. Hot sauce, sliced jalapeños, chopped green onions, or a dollop of sour cream all make excellent additions.

Pair this hearty breakfast bake with freshly brewed coffee, orange juice, or even mimosas for a festive weekend brunch. It is a complete, satisfying meal that will keep everyone full and happy all morning long, making your weekend gatherings truly memorable.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, the enchiladas can be fully assembled and kept covered in the refrigerator overnight. Bake them fresh in the morning, adding about 5 to 10 minutes to the baking time.
Why did the tortillas turn soggy?
This happens if the tater tots were not baked until crispy beforehand, or if the scrambled eggs were too runny when assembled. Make sure both are properly cooked before rolling.
Can corn tortillas be used instead of flour?
Flour tortillas are highly recommended because they are more pliable and hold up much better under the heavy country gravy without tearing.

A white ceramic baking dish filled with golden baked breakfast enchiladas covered in melted cheese and parsley

Ingredients

  • 2 cups frozen tater tots
  • 1 lb ground country sausage
  • 8 large eggs
  • 2 cups country sausage gravy, store-bought or made ahead
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 tbsp chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Spread the frozen tater tots evenly on a baking sheet and bake for 20 minutes until they are golden brown and crispy. Remove from the oven and set aside.
  2. In a large skillet over medium-high heat, cook the ground country sausage, breaking it up with a spoon, until it is fully browned and cooked through to a safe internal temperature of 160°F (71°C). Remove the sausage from the skillet and set aside.
  3. In a medium non-stick skillet over medium-low heat, pour in the whisked large eggs. Scramble gently until they are soft, creamy, and barely set. To cook them fully through, heat them to an internal temperature of 160°F (71°C).
  4. Lay out the flour tortillas on a clean surface. Divide the scrambled eggs, crispy tater tots, and cooked sausage evenly among the tortillas. Roll each tortilla tightly around the filling and arrange them seam-side down in a greased 9x13-inch baking dish.
  5. Pour the thick country sausage gravy evenly over the rolled tortillas, making sure to cover the ends. Sprinkle the shredded cheddar cheese and shredded pepper jack cheese generously over the top of the gravy.
  6. Bake the assembled dish at 375°F (190°C) for 15 to 20 minutes until the cheese is completely melted and bubbling fiercely. Garnish with the chopped fresh parsley before serving hot.
