Tips for success
For the best texture, use a thick, high-quality salted caramel sauce. If it's too thin, simmer it on the stove for a few minutes to reduce and thicken. When grating the chocolate, hold the block at an angle to get long, even shavings.
If the chocolate starts to soften, pop it in the freezer for a few minutes. The shortbread base can be baked a day ahead and stored in the pan, covered, until ready to assemble.
To get perfectly clean slices, run the knife under hot water and wipe it dry before each cut. This melts through the chocolate and caramel smoothly.
If the bars are too hard straight from the fridge, let them sit at room temperature for 5 to 10 minutes before slicing. For a more dramatic pull-apart effect, slice the bars into larger rectangles instead of squares—this gives longer caramel ribbons.
Variations
- Dark Chocolate Only: Use 8 oz of dark chocolate (70% cacao) instead of milk chocolate for a more intense, less sweet flavor. The bitterness of dark chocolate balances the sweet caramel beautifully.
- Add Sea Salt Flakes: Sprinkle a pinch of flaky sea salt on top of the chocolate layer before chilling. This enhances the salted caramel flavor and adds a delightful crunch.
- Walnut Swap: Replace pecans with roasted walnuts for a different nutty taste. Toast the walnuts lightly and chop them finely to match the texture of the original.
- Gluten-Free Version: Substitute the all-purpose flour in the shortbread with a 1:1 gluten-free flour blend. The rest of the recipe remains the same, and the bars are just as delicious.

Serving ideas
Serve the fudge bars chilled or at room temperature. For a truly decadent experience, warm a bar in the microwave for 10 to 15 seconds to make the caramel extra gooey.
Pair with a scoop of vanilla ice cream or a drizzle of extra caramel sauce. These bars are rich, so a small square is satisfying. They're perfect for holiday dessert tables, bake sales, or a special treat with coffee.
For a beautiful presentation, arrange the bars on a platter and sprinkle with a little flaky sea salt before serving. The contrast of the dark chocolate, golden caramel, and crunchy pecans makes them visually appealing.
They also make wonderful gifts—place a few in a decorative box or tin. However you serve them, these bars are sure to impress with their layers and flavor.

Salted Caramel Pecan Dark Chocolate Fudge Bars

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/4 tsp salt
- 1 cup salted caramel sauce, store-bought or homemade
- 1 cup roasted golden pecans, finely chopped
- 8 oz darkened milk Belgian chocolate, grated
Instructions
- Heat the oven to 350°F (175°C). Line an 8-inch square baking pan with aluminum foil, leaving overhang on two sides. In a mixing bowl, combine the flour, sugar, and salt. Add the cold cubed butter and cut it in with a pastry cutter or fork until the mixture resembles coarse sand with a few pea-sized butter pieces. Press the mixture evenly into the bottom of the prepared pan. Bake for 15 to 18 minutes, until the edges are lightly golden.
- Place the roasted golden pecans on a cutting board. Using a sharp chef's knife, chop them rhythmically, cutting across the whole nut until they are finely chopped but not powdery. You should have about 1 cup of chopped pecans. Set aside.
- Take the block of darkened milk Belgian chocolate and grate it on the large holes of a box grater. Work over a plate or bowl to catch the shavings. You should have about 2 cups of fluffy chocolate shavings. Set aside.
- Pour the thick, bubbling molten amber salted caramel over the shortbread base, spreading it evenly with an offset spatula. Sprinkle the chopped pecans over the caramel, pressing them gently so they adhere. Ensure the caramel and pecans reach the edges of the pan for even coverage.
- Sprinkle the grated chocolate evenly over the caramel and pecan layer, covering completely. Gently press the chocolate into the caramel with your fingers or the back of a spoon, but do not mix—the chocolate should remain as a distinct top layer.
- Place the pan in the refrigerator and chill for at least 30 minutes, until the caramel is firm and the chocolate is set. This step is essential for clean slicing.
- Remove the chilled bars from the pan using the foil overhang. Place on a cutting board. Using a sharp chef's knife, slice the thick bar cleanly in half. Then pull the two halves apart slowly, letting the caramel ribbons stretch between them. Continue slicing into 16 bars, wiping the knife between cuts for clean edges.
