Before you start

Before starting, heat the oven to 350°F (175°C) and line an 8-inch square baking pan with aluminum foil, leaving overhang on two sides for easy removal. Measure out all ingredients: flour, sugar, salt, butter, caramel sauce, pecans, and chocolate. If using a block of chocolate, ensure it is cold for easier grating.

Have a box grater, chef's knife, cutting board, and mixing bowls ready. The caramel sauce should be at room temperature or slightly warm for easy spreading.

If you're making homemade caramel, do that first and let it cool to a thick but pourable consistency. Prepare a clean workspace and have a sharp knife for slicing the finished bars.

Ingredients at a glance (7)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 1 cup salted caramel sauce, store-bought or homemade
  • 1 cup roasted golden pecans, finely chopped
  • 8 oz darkened milk Belgian chocolate, grated

Instructions

Prepare the Base and Toppings

  1. Make the Shortbread Base
Heat the oven to 350°F (175°C). Line an 8-inch square baking pan with aluminum foil, leaving overhang on two sides. In a mixing bowl, combine the flour, sugar, and salt. Add the cold cubed butter and cut it in with a pastry cutter or fork until the mixture resembles coarse sand with a few pea-sized butter pieces. Press the mixture evenly into the bottom of the prepared pan. Bake for 15 to 18 minutes, until the edges are lightly golden.
Look for The shortbread should be firm to the touch and just starting to brown at the edges.
Tip Pressing the dough firmly prevents cracks and ensures an even base.
  2. Chop the Pecans
Place the roasted golden pecans on a cutting board. Using a sharp chef's knife, chop them rhythmically, cutting across the whole nut until they are finely chopped but not powdery. You should have about 1 cup of chopped pecans. Set aside.
Look for The pecan pieces should be uniform, about the size of small peas.
Tip A rocking motion with the knife tip on the board gives even, controlled chops.

The shortbread base should be baked until lightly golden at the edges and firm to the touch. The pecans should be finely chopped, and the chocolate grated into fluffy shavings. The caramel sauce should be thick and at room temperature. Everything should be ready to assemble before moving to the next phase.

Assemble and Chill

  1. Grate the Chocolate
Take the block of darkened milk Belgian chocolate and grate it on the large holes of a box grater. Work over a plate or bowl to catch the shavings. You should have about 2 cups of fluffy chocolate shavings. Set aside.
Look for The shavings are light and airy, with no large chunks remaining.
Tip If the chocolate softens, chill it for 10 minutes before grating.
  2. Spread the Caramel and Pecans
Pour the thick, bubbling molten amber salted caramel over the shortbread base, spreading it evenly with an offset spatula. Sprinkle the chopped pecans over the caramel, pressing them gently so they adhere. Ensure the caramel and pecans reach the edges of the pan for even coverage.
Look for The caramel layer is smooth and glossy, with pecans distributed evenly.
Tip Warm the caramel slightly if it is too thick to spread easily.
  3. Add the Chocolate Layer
Sprinkle the grated chocolate evenly over the caramel and pecan layer, covering completely. Gently press the chocolate into the caramel with your fingers or the back of a spoon, but do not mix—the chocolate should remain as a distinct top layer.
Look for The chocolate shavings form a thick, even crust over the caramel.
Tip Avoid pressing too hard, which would push the chocolate into the caramel.
  4. Chill to Set
Place the pan in the refrigerator and chill for at least 30 minutes, until the caramel is firm and the chocolate is set. This step is essential for clean slicing.
Look for The surface feels firm to the touch and the caramel does not shift when the pan is tilted.
Tip Chilling longer, up to 2 hours, makes slicing even easier.

The caramel layer should be spread evenly, with pecans pressed in gently. The chocolate shavings should cover the caramel completely. After chilling, the surface should feel firm and the caramel should not shift when the pan is tilted. The bars should be cold and set before slicing.

Slice and Serve

  1. Slice and Pull Apart
Remove the chilled bars from the pan using the foil overhang. Place on a cutting board. Using a sharp chef's knife, slice the thick bar cleanly in half. Then pull the two halves apart slowly, letting the caramel ribbons stretch between them. Continue slicing into 16 bars, wiping the knife between cuts for clean edges.
Look for Golden ribbons of gooey salted pecan caramel stretch as the halves separate.
Tip For the cleanest cuts, dip the knife in hot water and wipe dry before each slice.

When slicing, the knife should cut through cleanly, revealing distinct layers of shortbread, caramel, pecans, and chocolate. The caramel should stretch slightly as the halves are pulled apart, indicating a chewy texture. The bars should hold their shape and be ready to serve.

Common mistakes

One common mistake is overworking the shortbread dough, which can make it tough. Mix just until the butter is incorporated and the mixture holds together when pressed. Another issue is spreading the caramel while it's too hot, which can cause it to soak into the shortbread and make the base soggy.

Let the caramel cool to a thick, spreadable consistency. Pressing the chocolate too firmly into the caramel can cause it to mix in, ruining the distinct layers. Gently sprinkle and press only lightly. Finally, slicing before the bars are fully chilled will result in messy, crumbly edges—patience is key.

How to tell it’s done

The shortbread is done when it is lightly golden around the edges and firm to the touch. The assembled bars are ready to slice after chilling for at least 30 minutes, or up to 2 hours for easier cutting. When sliced, the caramel should be set but still soft and chewy, not runny.

The chocolate layer should be firm and not sticky. The bars should hold their shape when lifted, but the caramel will stretch when the halves are pulled apart. There is no protein in this recipe, so no internal temperature check is needed; visual and tactile cues are sufficient.
