Tips for success

For a deeper flavor, you can sear the ribs in a hot skillet before adding them to the slow cooker. This adds a nice crust and extra caramelization, but it's not necessary—the slow cooker does most of the work.

If you do sear, just be sure to brown them in batches so they don't steam. Another way to boost the flavor is to add a splash of liquid smoke or a few drops of Worcestershire sauce to the root beer mixture, though the recipe is delicious as-is.

To get a sticky, barbecue-style finish, transfer the cooked ribs to a baking sheet and brush with some of the reduced sauce from the slow cooker. Broil for 2-3 minutes, watching closely, until the sauce is bubbly and caramelized.

This step is optional but adds a lovely charred edge. If you're serving a crowd, you can keep the ribs warm in the slow cooker on the 'warm' setting for up to 2 hours before serving.

Variations

  • Spicy Kick: Add 1-2 teaspoons of chipotle powder or a minced chipotle pepper in adobo sauce to the BBQ sauce before pouring over the ribs. The smoky heat complements the sweet root beer and molasses beautifully.
  • Honey Garlic: Replace the molasses garlic BBQ sauce with 1/2 cup honey, 1/4 cup soy sauce, 4 minced garlic cloves, and 2 tablespoons tomato paste. Stir to combine and pour over the ribs.
  • Cherry Cola Ribs: Swap the root beer for cherry cola and use a smoky barbecue sauce. The cherry adds a fruity note that pairs well with pork. Finish with a sprinkle of smoked paprika.
  • Dr Pepper Ribs: Use Dr Pepper instead of root beer, and add 1 tablespoon of Worcestershire sauce to the BBQ sauce. The Dr Pepper's unique blend of 23 flavors gives the ribs an intriguing depth.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the fridge for up to 4 days. The sauce will thicken; add a splash of water when reheating.
Freezer
Freeze cooked ribs in a freezer-safe container or bag for up to 3 months. Thaw overnight in the fridge before reheating.
Reheat
Reheat ribs in a 300°F oven, covered with foil, for 15-20 minutes, or until warmed through. Or microwave in 30-second bursts, adding a little water if needed.

Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently in the microwave or on the stovetop with a splash of water or root beer to loosen it. These ribs also freeze beautifully—wrap them tightly in foil or place in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.

This recipe is perfect for making ahead. You can assemble everything in the slow cooker insert the night before, cover, and refrigerate. In the morning, simply place the insert in the slow cooker base and turn it on low.

The cooking time may be slightly longer if starting from cold. Alternatively, cook the ribs fully, then cool and refrigerate. Reheat in a 300°F oven or in the slow cooker on low until warmed through.

Serving ideas

These ribs are hearty enough to stand alone, but they pair beautifully with classic sides like coleslaw, cornbread, or a simple green salad. The sweet and tangy sauce also loves cool, creamy sides like potato salad or macaroni salad. For a BBQ feast, serve with baked beans, roasted corn, and pickles.

To serve, cut the racks into individual ribs and pile them on a large platter. Spoon the caramelized onions and extra sauce over the top. Garnish with chopped fresh parsley or chives for a pop of color, if you like.

Provide plenty of napkins—these ribs are messy in the best way. For a more composed plate, serve the ribs over creamy mashed potatoes or polenta, letting the sauce soak into the base.

Frequently asked questions

Can these ribs be made in an Instant Pot or pressure cooker?
Yes, but the texture will be different. For a pressure cooker, cook on high for 25-30 minutes, then natural release. The meat will be tender but not quite as fall-off-the-bone. You can also finish under the broiler to caramelize the sauce.
Why are the ribs not falling off the bone?
The ribs likely need more time. Pork ribs need a long, slow cook to break down the connective tissue. If after 6 hours they're not tender, continue cooking in 30-minute increments until they are. Also, avoid opening the lid frequently, as that extends cooking time.
Can this recipe be doubled?
Yes, as long as the ribs fit in a single layer in your slow cooker. If using a larger slow cooker, you can double all ingredients. Cooking time may need to be increased slightly, so check for tenderness before serving.
What is the best root beer to use?
Use a root beer with real cane sugar, not high-fructose corn syrup. Artisanal or craft root beers often have more complex spice notes that enhance the dish. Avoid diet or zero-sugar versions, as they can become bitter when cooked.
Can these ribs be finished on the grill?
Absolutely. After slow cooking, transfer the ribs to a preheated grill over medium heat. Brush with some of the reduced sauce and grill for 5-7 minutes per side, until charred and sticky. This adds a lovely smoky flavor and crispy edges.

Root Beer Molasses Baby Back Ribs: Slow Cooker Magic

Prep 10 minCook 6 hTotal 6 h 10 minServes 4
Fall-off-the-bone baby back ribs in a glossy molasses glaze, served on a white plate

Ingredients

  • 2 racks baby back pork ribs (about 2 lb total)
  • 1 cup diced sweet onion
  • 1 1/2 cups root beer
  • 1 cup molasses garlic BBQ sauce

Instructions

  1. Place the racks of baby back ribs side by side in the bottom of a 6-quart slow cooker. Scatter the diced sweet onion evenly over the ribs. Pour the root beer around and over the meat, making sure the ribs are partially submerged.
  2. Pour the molasses garlic BBQ sauce in thick ribbons over the ribs and onions, covering as much surface as possible. Do not stir; let the sauce sit on top.
  3. Cover the slow cooker and cook on low for 6 to 8 hours, or until the meat is fall-off-the-bone tender. The ribs should be deeply caramelized and the sauce thickened. Let it rest for 3 minutes before slicing.
  4. Using a fork, carefully lift the ribs out of the slow cooker and transfer to a cutting board. Let rest for at least 3 minutes. Then cut into individual ribs and serve with the caramelized onions and extra sauce from the pot.
