Tips for success
For the absolute crispiest skin, prepare the chicken the night before by patting it dry and leaving it uncovered on a wire rack in the refrigerator. This air-drying process dehydrates the skin, allowing it to render and crisp up much faster in the hot oven.
Additionally, basting the chicken and potatoes every twenty minutes during the last half of cooking ensures a beautiful glaze and extra-flavorful potatoes.
If the chicken skin begins to brown too quickly before the meat is fully cooked, loosely tent a piece of aluminum foil over the top of the breast.
This protects the delicate skin from burning while allowing the heat to continue cooking the thickest parts of the bird. Always ensure the potatoes are cut to a uniform size so they finish roasting at the exact same time as the chicken.
Variations
- Garlic Herb: Add four cloves of minced garlic to the herb butter mixture before rubbing it onto the chicken.
- Spicy Citrus: Toss a half teaspoon of crushed red pepper flakes with the potatoes for a subtle kick.
- Onion and Herb: Scatter thick wedges of red onion in the pan alongside the baby potatoes before roasting.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze carved meat in a freezer-safe bag for up to 3 months; potatoes do not freeze well.
- Reheat
- Reheat in a 350°F (175°C) oven for 15 minutes to help recrisp the skin.
Store any leftover roasted chicken and baby potatoes in an airtight container in the refrigerator within two hours of cooking. Kept properly, the leftovers will remain fresh and flavorful for up to three to four days.
For the best texture, store the carved chicken meat separately from the potatoes, as the moisture from the chicken can soften the potato skins over time.
While this dish is best enjoyed fresh from the oven for maximum skin crispiness, the prep work can be done in advance. The herb butter can be mixed and stored in the refrigerator for up to a week, and the potatoes can be washed and dried the day before. Avoid slicing the potatoes too far ahead, as they may discolor when exposed to air.
Serving ideas
Present the roasted chicken whole in the roasting pan for a dramatic family-style presentation, surrounded by the golden potatoes, caramelized lemon slices, and charred rosemary sprigs.
Carve the chicken at the table, serving a mix of white and dark meat to guests. Drizzle the warm pan juices over each portion of chicken and potatoes immediately before eating to enhance the rich, savory flavors.
A simple, crisp green salad dressed with a light vinaigrette makes an excellent accompaniment to balance the richness of the roasted chicken and buttery potatoes. Steamed green beans or roasted asparagus also pair beautifully, adding color and freshness to the plate. Serve with a crusty baguette to soak up any remaining herb-infused pan juices left on the plate.

Roasted Lemon Chicken with Crispy Baby Potatoes

Ingredients
- 1 whole roasting chicken (about 4-5 lb)
- 1 1/2 lb baby potatoes, washed and dried
- 1/2 cup butter, softened
- 4 fresh rosemary sprigs
- 2 lemons, sliced
Instructions
- Preheat the oven to 400°F (200°C). Pat the chicken completely dry inside and out with paper towels to ensure the skin crisps up perfectly. Place the baby potatoes in a bowl and set aside. Avoid rinsing the poultry to prevent splashing water around the kitchen sink. Thoroughly clean all prep surfaces, utensils, and hands immediately after handling the raw chicken.
- Finely chop one tablespoon of fresh rosemary leaves and mix them with the softened butter in a small bowl. Gently loosen the skin over the chicken breasts and rub half of the herb butter directly onto the meat underneath. Rub the remaining herb butter all over the outside of the chicken skin, then stuff the cavity with a few lemon slices and rosemary sprigs.
- Place the prepared chicken breast-side up in the center of a heavy dark roasting pan. Arrange the baby potatoes and remaining lemon slices around the chicken in a single layer. Scatter the remaining fresh rosemary sprigs over the potatoes. Toss the potatoes gently in the pan to coat them lightly with any butter that drips down.
- Transfer the roasting pan to the preheated oven. Roast for about 70 to 75 minutes. Every 20 minutes, carefully baste the chicken and the baby potatoes with the melted herb butter and savory pan juices that accumulate at the bottom of the roasting pan using a spoon or baster.
- Insert an instant-read meat thermometer into the thickest part of the chicken thigh without touching the bone. Ensure the thermometer registers a safe internal temperature of 165°F (74°C). Once fully cooked, carefully transfer the chicken to a clean cutting board and let it rest for 15 minutes before carving to allow the juices to redistribute.
- Use a sharp carving knife to slice the roasted chicken into portions. Serve the juicy chicken slices alongside the crispy, butter-basted baby potatoes and caramelized lemon slices, drizzling the remaining pan juices over the top before serving.
