Tips for success
For the best texture, do not skip the step of crumbling the parchment paper—it creates a loose cover that lets steam escape slightly, avoiding a soggy top.
If you do not have parchment, you can use aluminum foil, but make sure it is tented so it does not touch the food.
To make this dish your own, try adding a handful of chopped fresh herbs like parsley or mint before serving. A drizzle of olive oil at the end adds richness.
This recipe also works well with zucchini or bell peppers added to the tray, though the cooking time may need a slight adjustment.
Variations
- Lamb and Mint: Swap the ground beef for ground lamb and add 2 tbsp chopped fresh mint to the meat mixture. Serve with a dollop of plain yogurt and a sprinkle of sumac for a Mediterranean twist.
- Spicy Harissa: Stir 1–2 tbsp harissa paste into the tomato-water sauce for a smoky, spicy kick. Reduce the red pepper flakes to 1/2 tsp to balance the heat.
- Vegetarian Version: Replace the meatballs with large portobello mushroom caps or thick slices of halloumi cheese. Adjust the cooking time to 25–30 minutes, and use a vegetable broth in place of the water.
- Cheesy Topping: After the initial bake, uncover the dish, sprinkle 1/2 cup crumbled feta or grated mozzarella over the top, and return to the oven for the final caramelizing step until the cheese melts and browns.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of water if needed.
- Freezer
- Freeze the fully baked dish in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a 350°F (175°C) oven for 15–20 minutes, or in the microwave in 1-minute increments until hot.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors continue to meld as it sits. Reheat gently in the oven or microwave, adding a splash of water if the sauce has thickened too much.
You can assemble the entire dish up to a day ahead: layer the eggplant and meatballs, pour the sauce, cover, and refrigerate.
When ready to bake, add 10 minutes to the covered baking time to account for the cold start. The recipe can also be frozen before baking for up to 3 months.
Serving ideas
Serve this tray bake hot from the oven, spooning the caramelized sauce over each portion. It pairs beautifully with steamed rice, couscous, or a hunk of crusty bread to soak up the juices. A simple green salad with lemon vinaigrette balances the richness.
For a heartier meal, tuck the eggplant and meatballs into warm pita bread with yogurt and fresh herbs.
Leftovers are excellent the next day, either reheated or served cold in a sandwich. This dish is versatile enough for both casual weeknight dinners and weekend gatherings.

Roasted Eggplant and Meatball Tray Bake

Ingredients
- 3 large eggplants, sliced into thick rounds
- 2 tbsp olive oil
- 1 tsp sweet paprika
- 1 tsp salt
- 500 g ground beef
- 1 grated onion
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp red pepper flakes
- Black pepper, to taste
- 1 tbsp tomato paste
- 1 cup warm water
Instructions
- Heat the oven to 400°F (200°C). Slice the eggplants into thick rounds, about 1/2 inch thick. In a large bowl, toss the eggplant slices with 2 tbsp olive oil, 1 tsp sweet paprika, and 1 tsp salt until evenly coated. In a separate bowl, combine 500 g ground beef, 1 grated onion, 2 minced garlic cloves, 1 tsp ground cumin, 1 tsp red pepper flakes, and black pepper to taste.
- Place the seasoned eggplant rounds in a single layer in a large baking dish. Nestle the meatball patties between the eggplant slices, tucking them slightly so they are surrounded by the eggplant.
- In a small bowl, dissolve 1 tbsp tomato paste in 1 cup warm water, stirring until smooth. Pour the tomato water evenly over the eggplant and meatballs, making sure to moisten all the pieces.
- Cover the baking dish with a sheet of parchment paper, crumpled slightly so it sits over the food without sticking. Transfer to the oven and bake at 400°F (200°C) for 40 minutes, until the eggplant is tender and the meatballs are cooked through.
- Remove the parchment paper and return the dish to the oven, uncovered, for an additional 5–10 minutes, or until the top is caramelized and the edges of the eggplant are browned. The meatballs should register 160°F (71°C) in the center.
- Spoon the roasted eggplant and meatballs onto plates, making sure to include some of the caramelized tomato sauce from the pan. Serve hot, with crusty bread or rice if desired.
