Tips for success

For immaculate bakery-style slices, run a long slicing knife under hot tap water, wipe it completely dry with a clean towel, and slice straight down in one smooth motion without sawing.

Wipe and reheat the knife blade between every cut to keep the dark ganache from smearing across the pink strawberry filling and white frosting swirls.

Select fresh strawberries that are uniformly sized and completely dry to top the white frosting swirls. Rinsing berries immediately before decorating can leave surface moisture that dilutes the frosting and causes the fruit to slide out of position during transport or serving.

Variations

  • Raspberry Ding Dong Cake: Swap the strawberry cream filling for a tart raspberry cream filling, and finish the top swirls with fresh raspberries for a bright berry variation.
  • Dark Chocolate Berry Cake: Use an extra-dark cocoa ganache on top of the sponge to create a deeper bittersweet contrast against the light, sweet strawberry cream interior.

Storage and make-ahead

Fridge
Store covered in the refrigerator for up to 3 days; keep chilled until shortly before serving.
Freezer
Freezing the fully assembled cake is not recommended as fresh strawberries and cream fillings separate upon thawing.
Reheat
This dessert is served chilled and should not be reheated.

Store the assembled sheet cake covered loosely with plastic wrap or inside a protective cake dome in the refrigerator.

Because the dessert contains fresh cream filling and fresh fruit, it must be kept chilled whenever not being served. Consume within 2 to 3 days for ideal sponge texture and to ensure the cut strawberry garnish remains fresh and plump.

The chocolate sponge cake can be baked or procured up to two days ahead and stored wrapped tightly at cool room temperature.

You may fully assemble the cake with its cream filling, ganache, and frosting up to 24 hours in advance of serving. Add the fresh strawberry halves just a few hours prior to presentation to keep the fruit looking vibrant and newly cut.

Serving ideas

Present the finished cake directly on the rustic wooden board for an impressive centerpiece display. Slice into 12 generous rectangular portions using a warmed knife.

The contrast of rich dark chocolate, pastel pink filling, white frosting, and ruby-red fruit creates a dramatic visual appeal that suits both casual parties and elegant celebrations.

Serve each chilled slice alongside a hot cup of dark roast coffee, espresso, or cold whole milk to complement the sweetness of the strawberry cream and deep cocoa ganache. Allow slices to sit at room temperature for about five to ten minutes before enjoying so the chocolate sponge softens to optimal tenderness.

Frequently asked questions

Can this sheet cake be assembled the day before serving?
Yes, the cake can be assembled, glazed, and frosted one day in advance. Keep it chilled in the refrigerator, and place the fresh strawberry halves on top within a few hours of serving to preserve peak berry freshness.
Why is the chocolate ganache melting the cream filling?
This occurs when the ganache is applied while still hot. Allow the glaze to cool until lukewarm and pourable, and ensure the layered cake base has been chilled before pouring.
How can clean slices be achieved without dragging the ganache?
Dip a sharp chef knife into hot water and dry the blade before every cut. The residual heat cuts cleanly through the ganache and cream without pulling or smearing.

Rich Strawberry Ding Dong Sheet Cake

Layered chocolate and strawberry ding dong sheet cake on a wooden board.

Ingredients

  • 1 recipe chocolate sponge cake, store-bought or made ahead
  • 2 cups strawberry cream filling, store-bought or made ahead
  • 1 cup chocolate ganache
  • 1/2 cup white frosting
  • 1 cup strawberry halves

Instructions

  1. Slice the chocolate sponge cake horizontally into two even flat layers using a long serrated knife. Set the bottom sponge layer directly onto a sturdy wooden board or serving platter. Spread the lush strawberry cream filling completely across the surface in a smooth, thick layer right up to the outer edges. Gently position the second chocolate sponge layer directly on top, pressing down very lightly to anchor it in place.
  2. Slowly drizzle the glossy chocolate ganache directly over the top dark sponge layer of the assembled sheet cake. Use an offset spatula to gently nudge the ganache across the entire surface so it coats the top evenly and drapes slightly toward the edges. Allow the ganache coating to settle naturally over the chocolate cake without disturbing the chilled cream layer underneath.
  3. Fill a piping bag fitted with a star tip with the white frosting. Pipe even, decorative white swirls in uniform rows across the top surface of the glossy ganache. Carefully press vibrant fresh strawberry halves directly into the center of each piped swirl. Chill the completed sheet cake thoroughly in the refrigerator for at least one hour before slicing into portions with a sharp knife.
